There is something so magical that happens when you have a great cut of delicious lamb and a roaring fire. Seasoned with flavors that will transform this dish into something extraordinary. All contained in an easy DIY brick oven.

Recipe
∙ Per Lamb rib (2 kg)
∙ Olive oil
∙ Juice and zest of 1 Lemon
∙ Salt & pepper the ribs generously
∙ 1 tablespoon Garlic flakes
∙ 1 tablespoon dried Oregano
∙ 11 medium Potatoes
∙ 1 Head of garlic
∙ Salt & Pepper to taste (potatoes)
∙ 1 teaspoon Celery salt
Roast in an oven @ 130°C for 3-4 hours

Great idea, looks delicious...will definitely try this one. Can you share more info on your outdoor pit, looks like a stone filled metal box, also your drum braai with rebar grill, very good idea. Thanks.

Hi Hilton. Its just a regular stone and mortar pit, filled with coarse and fine aggregate., with two draining holes at the bottom. It makes for easy cleaning after each fire. When the fire has died down I rinse away the ashes with a hose and the ashes and water flow through the aggregate and drain out the bottom of the pit. Hope it answers your question. Hi David, I didn't measure the temp inside the oven, but would guess it to be around the 150'C mark. Thanks for watching.

Thanks for sharing, looks delicious. What temp are you running at the start of the cook, how long did you preheat the bricks? Please share more info on the brick oven build?

Hi Riaan. I placed wood inside the oven and let it completely burn out, with hot coals still on the bottom. Took about 1.5 -2 hours. Didn't measure the temp inside , but would guess around 150'C. Depends on the size of fire you start out with. The bricks holds the temp really well. Just used regular clay "stock" bricks. Packed close so that there is little to no gaps between bricks for heat to escape.
