Roosterkoek is a type of South African bread cooked on a Rooster(Grill) over warm coals. The perfect bun to be stacked full of succulent chicken fillets. Drizzled with a sweet cranberry reduction and topped off with Smokey bacon and a few slices of brie. Enjoy!

Recipe
∙ 2 Chicken breasts
∙ 4 slices Bacon
∙ 4 slices Brie
∙ Oil for frying
∙ ½ cup Mayonnaise
∙ a few dashes of hot sauce
Roosterkoek
∙ 4 cups Cake flour
∙ 2 cups Water
∙ 1 teaspoon Sugar
∙ 7 grams instant dry yeast
∙ 1 teaspoon salt
Cranberry reduction
∙ 70 grams of dried Cranberries
∙ ½ cup Sugar
∙ 1 cups Water
∙ Pinch of salt
Chicken
Marinade
∙ Salt & pepper to taste
∙ ½ tablespoon Paprika
∙ 1 tablespoon Garlic powder
∙ ½ teaspoon Cayenne powder
∙ 200 ml Buttermilk
∙ Pinch of fine cloves
Dredge
∙ Flour for coating
