I'm thrilled to see you use what you call "tallow" instead of toxic seed oil. I grew up on bacon grease and butter but here in DFW we get lard from the hispanic meat market. It's so much better for your health. And there's nothing better than cast iron. Well done with this video!!!

Baked eggplant, onion and okra, making salad of them is so delicious! Mixed them, chopped garlic, diced garden fresh tomato, green Italian parsley, olive oil, salt and lime juice. One of best healthy salad✔✔

When my okra get to big to slice I open the pod up by slicing down the sides and removing the seeds to use and throw the pod away. My family loves fresh or frozen okra seeds in beef and vegetable soup.

How crispy does this really get? I think I'm expecting too much. When I try it, it starts burning before it gets as crispy as I'd hope.

I can get mine fairly crispy in the cast iron when I do it. The inside on thicker pieces may not be entirely crispy, but all in all I find them pretty crispy. Maybe cook them at a lower heat for longer, every stove is different so maybe it's just getting too hot and burning before crisping

I'm eager to try this. I mostly eat okra in gumbo, where I overload it with okra. I love it pickled and fried too. That tomato looks great and natural. Some of the tomatos in stores have been crossed with pumpkin genes to make them easier to ship across the country--I think those taste horrible--local is best! Carbs in vegetables are called Complex Carbs=the good kind. Simple Carbs like sugar and white flour are the kind that eventually get stored as fat if you don't burn them with exercise.

I believe I did it for 375. I apologize. I will say that time will depend on the oven. I often go by smell when I am cooking something in the oven. If it smells good then I check it and start checking every few minutes because my oven is finicky.

Update 2 months after my original comment: I’ve oven-roasted okra 3-4 times now. I love it, and so does my 8yo son. It will continue to be a roasted veggie recipe I prepare on a regular basis.

This is how I've always cooked mine, but we never called it "roasting" (and I still won't).. It's still fried Okra, just without the batter. Roasting is the action of cooking something in an oven or over an open fire. Words are important.

Please change you title. It's misleading. This is fried okra, because you used solid oil in the pan. It is not roasted. Roast means to cook with a dry heat.

Roast- exposure to heat in an oven etc.. No mention of what ingredients you place in the pan. When roasting cuts of meat, sometimes liquids are added. That does not negate the fact you are still roasting.
