Q: Can I do this with store-bought tomatoes? A: Sure, I've tested it with grocery store tomatoes. Not as good, but still damn good. Honestly, pound-for-pound, this may be my favorite recipe I've done. Q: Could I fire-roast the tomatoes instead? A: No doubt that would be delicious, but I think it would be a different sauce. The real magic with this one, IMHO, is the caramelized layer you get on the bottom of the pan, and that only comes from roasting in the oven long enough to get some real reduction happening. Q: Don't you feed your kids? A: The little one eats off our plates, the big one is super picky. Q: Does your finished pasta look kinda dry? A: I'm a big fan of minimally-sauced pasta, but you do you. Q: Seriously, angel hair pasta? A: Yeah, I'm not a fan either. I opened up the pantry that was all that was left. (No judgment if you like angel hair.) Q: Why do you break your pasta in half? A: I seek to minimize twirling. Q: Could I use this as a pizza sauce? A: You could, but I wouldn't. In my experience, pizza sauce works best with barely cooked (or totally raw) tomatoes. Pizza needs that brightness. Heavily cooked tomato sauces on pizza tend to give you a flavor profile that tastes more like lasagna than pizza. IMHO.

I did that and it was OMG SO DELICIOUS. I just made with tomatoes and onions, i made a mistake and poured a tiny bit of Brazilian Rum instead of olive oil. The boozy sauce had a deeper and more complex flavor, as you said. Great recipe adam 👍🏽

This is by far the best cooking channel I found so far. It has a good pace a lot of information: scientific, popular knowledge and personal experience. Puts a lot of work into it: so much I'm worrying about his health. It could benefit from aditional nutrition information like calories and percentage of fat/carbs/proteins.

I make roasted tomato salsa and I keep the burnt skins on, I find it gives a great flavor. Once I blend everything up you cant even tell there are skins

I have done this with canned whole plum tomatoes, in a huge stainless steel pan. The key was to gently turn them every 10 minutes or so. My old roommate, whose mom was from Italy, showed me how to do it. Very good sauce.

Tried this today, with one tweak that worked really well: Allocate 1 extra medium tomato per guest, but do not roast. When your pasta water comes to the boil, blanch the tomatoes 1 minute. While pasta is boiling, de-skin the tomatoes, cut into eighths, and stir into the now-finished sauce. Adds a nice note of bright, raw-tomato freshness to the sauce. The base sauce was fab on its own (as you know) and this is definitely an optional step, but I sure liked how it came out. Thanks for the recipe!

Another great variation of this recipe is to cook a full tray of cherry tomatoes still on the vine. Throw the full thing in a very hot oven, bring them out after 35 - 45 minutes, slightly crush them and cook in a frying pan with some garlic and reduces down with a splash of white wine. Add some basil and season and you’ve got a perfect sauce for gnocchi or pasta, with fresh cherry tomatoes (that are still on the vine it adds huge flavour) it will be one of the best, simplest tomato sauces you’ve ever made. Got the recipe from one of Jamie Oliver’s Italian cook books btw

If you dont have an oven, or are short on time, you can roast the tomatoes on your gas stove. Hopefully you have a rack with a handle made for gas roasting but if not you can try to rest them on the stove directly itll just be a bit messy. I've cut an onion in half and put the cut side down and roasted with the tomatoes. The roasting of all didnt take more than 10 mins. Didnt brown my onions as much as my tomatoes as I wanted my onions to bring a smoky flavor and not sweeten it. Added half olive oil and half garlic butter added the onions and tomatoes. I like a little kick so I added some red chilli sauce and a very small wedge of lemon. When my pasta was done I added that in the sauce and added dry basil on top. (I dont have access to fresh parsley or basil in my city) This is how I adopted this recipe. Hope this helps!

I almost always use a little black coffee for deglazing, even red sauce. What can I say, coffee works with just about anything!

I agree 100% I put about half a cup of coffee when I make a batch of chilli and it really adds a nice depth of flavor

I drooled when I first saw this video. 2 days later I made it. Did not disappoint! It was so good and I was so proud of myself for making something fancy! 😊 Edit: I ended up making this 3 times this week. Even the picky husband enjoyed it!

Ok, I made it! My supersonics just got rained on and I was afraid they would split, so I picked several of them to roast up. I learned that supersonics are mostly water - a big panful reduces right down! The caramelized flavor was delightful, but I definitely didn’t let my onion and garlic cook enough. All around I was pleased with it. Might try again when the weather cools down and running the oven for over an hour at such a high temp isn’t such a tax on the AC.

I made these today with some home grown tomatoes given to me and even made some meatballs with the extra onion and garlic I chopped up and some ground beef, it came out great. The sauce ran out really fast probably because there were only four but what I had was great, acidic sweet smoky, definitely worth the effort. I keep coming back to this guy, even made the broiled choco chip cookies and the Italian meringue chocolate cake last week.

I'm used to do a somewhat similar version of this! I make a some kind of marmelade out of cherry and pachino tomatoes, Tropea onions and garlic, and add some triple concentrated tomato paste. Add 1 and a half teaspoon of sugar then pass this marmelade into my manual vegetable masher, so it gets rid of all tomato skin. Then, I throw the result in a cast iron pot and stir it on low heat with a little bit of olive oil. During this process I tend to purposely burn the bottom of my sauce, just a little bit. It gives an excellent flavour. When the pasta has done boiling, and it's time to put it over the sauce, I add fresh basil on my sauce and pour some olive oil. Throw the pasta in (al dente), stir it in the pot together with sauce for half a minute, and it's done. Basil is such a mandatory ingredient for this. I learned this from my grandmother which is from Marsala, Sicily, and modified it a little bit following my personal taste. Love you, grandma.
