Such a brilliant idea for roasting 4 chickens at once! I mean, it may common sense since use the amount of electricity (whether you roast one or four), but I didn't think of it. 🤷‍♀️ so thank you, for inspiring me to do better!!!!

Out of all the homesteads I watched grow meat chickens last year, yours were the BEST!!!! if your growing meat for your family why not go big or not at all. Couldn't believe people were feeding chickens for 8 to 12 weeks to end up with a 3 lb chicken. GREAT JOB!!

The media has made chicken sound like nuclear waste! I always wash my chickens off in my sink. Inside and out. And then cook them and I dont freak out about the nuclear chicken juice. I just wash things down and wash my hands. But I dont freak out about it. I'm never sick. I haven't been sick in a year. I think people are being to antiseptic now a days. Everyone just needs to use common sense.

Great video! I just thawed out 3 whole chickens and plan to roast them and then make your chicken soup base and can it up. Thanks for all of the kitchen inspiration!

I was very fortunate to inherit my mom's roaster. It is a good size & has what my dad named, side boards, an extension to fit turkeys and a lid. I absolutely love it. I've never seen another and neither have any of my friends. My parents got it when they first got married in 1946.

When we butcher we usually put as many birds in our smoker and roaster as we can and then the next day after processing day we can. That's usually eight or nine Birds. Do the same thing when it's turkey processing day. Seems to be just about enough can poultry for the year for us.

@@1870s yes it does. I usually use Applewood to smoke them. Makes great smoked chicken salad sandwiches.

@@SBECKTRADITIONS no they're probably only in ice for a couple of hours why were finishing up butchering. And then they go right in the smoker and roaster.

I always use sage when cooking my turkeys unless I am canning them because I read the sage is bitter when canning. What is your thought on that as you are using it with your chickens. Thanks 😊

I love yur videos and thr lovely energy from yu and yur husband and daughter...💕💕💞..I baked 6 chicken for canning they came out great. I shredded the meat and put in fridge while making the brooth..question..what did yu do with the chicken skin that was pulled off?? Very fatty indeed..I thew it away..🤔🤔

Those were definitely some very big chickens, and when they came out of the oven they looked absolutely delicious. I can just imagine how good it smelled in the house. That just made me want a nice hot chicken sandwich. Thanks for sharing my friend.

Love your videos. We don't have chickens to butcher and I don't have the space to freeze chicken carcass. I'm thinking that I could buy the #10 bag of chicken quarters from Walmart and put it all in the 18 qt roaster with spices and vegies. After 4 hours maybe pull out the chicken and bone it. Then could I can it? Then return the chicken bones back into the roaster for another 6 hours and then can chicken broth. Would this work? Or will my chicken be too "cooked" to can? I could also freeze dry the chicken for dog food. Thanks

just found your videos. You are the first person i have heard say to roast chickens before canning. I canned some once because it was taking up too much of my freezer space but it was boiled to get it off the bone. The taste of the end product was not the best. I finally found i could stomach it in chicken and dumplins. I compared it to fresh tuna vrs. canned tuna. They do not taste the same at all. So does roasting it improve that canned taste?

Yes it taste wonderful, with all those seasonings, yummy. I know people that smoke it before canning it and it's supposedly yummy as well. We have raw packed chicken for canning too, but I much prefer roasted chicken.

Working full-time it makes quick and fast meals to already have cooked chicken on the shelf and it's just better food security, being not dependant on power

Having the canned chicken is a fast way to get meals made. I always have canned meats on hand. Right now I have canned pork, beef, corned beef, salmon, tuna, ground turkey, ground beef, chicken, turkey. Love canning, have been doing it for 41 years on my own since i got married. Helped gram and my mom growing up. Everyone should learn this. Going to clean out my freezer, and can up what's there. Can on!🍗🥩🍠🥫🍄🍅🥔🥕

Additional reasons: (1) Shelf life - Even though frozen, vacuum sealed, meats have an extended shelf life, it doesn't compare to the shelf life of properly canned meats. As long as the seal isn't broken, canned food is safe to eat. Over time there may be some nutrition loss along with color/flavor changes, yet still safe. Freezer burn will set in, even with vac packed foods, as plastic doesn't offer the protection of glass or metal. (2) Ditto on security. Canned food, sitting on the pantry shelf, doesn't have the risk associated with freezers and power failure. Whether a failure of the freezer, itself, or from the grid going down, with a prolonged shutdown, the food will thaw. If not canning, dehydrating or otherwise consuming, spoilage soon follows thawing. FWIW... I'm in the process of reducing my reliance on a freezer to a bare minimum. Basically things that are best frozen, such as some desserts, and using the freezer as a "holding tank". For example, buying several turkeys before holidays and hold them in the freezer until they can be canned. Extra space in the freezer will be used for making (storing) block ice. Block ice is handy if (when) the power fails. (3) Canning and dehydrating are, in essence, one time expenses. Freezing in an on-going expense, as the power bill had to be paid every month. Especially when a separate, stand-alone, large freezer is in use. Canning can allow reduced need for large capacity freezing capability & resulting expense.

I have learned that I love my gas stove, but I sadly don't love the gas oven attached to it. I am just terrible at using it 😂

Y'all give me opinions. My grandma didn't worry about meat or egg safety. She did raw chicken with her hands, handled spices and other foods, the dishrag, oven handle, etc. I never got sick. Now I'm grown and I can't even use meat from the freezer that I safely thaw without getting sick as a dog. I use gloves or proper hand washing practice always. Is it how stores and plants handle the food now? Or am I just useless? Lol! I'm not trying to start arguments. I'd really like to be able to buy bulk meat to freeze and use as needed without feeling like I'm dying. Help please 🥺

I think your chicken looks great but I don't think I could toss bags on the clunter, grab the salt spoon, rub it ito the chicken, then toss the contaminated spoon back in my salt.
