They make these really cool things called tire chains! Worth the investment!

Might be handy to carry some tire chains and put them on when you have ice like you had on this recovery. When it's ice you may be able to get around with out them but it would have helped both pulling the Honda out and in control in going and stopping on an icy hill.

Robby the KEI van you saw was a Honda Acty, we own one. Do some research before buying, they’re available with factory lockers but those units are typically a 40mph rig due to very low gears and most times 4speed. Ours is a 5speed 2WD because we use it on the roads and although it’s really pushing it we can hit 65mph. Keep in mind the 3cylinder engine is a 36hp machine. Subaru and Suzuki also build KEI vans and the Subaru has features maybe better suited for tracks.

The Laymo definitely needs tracks. It looked so amazing in your snowed in video. You should also do a road trip with a k car and the little British car you picked up. Full on mini adventures would be hilarious. Mini tents, child size camp chairs, little tea sets for eating, etc.

Winter camping is great. But for your first time you have to build a few quinzee huts and see who can last the night. It will be warmer than the tent with just a few candles. Did this up here in Canada and I woke up sweating. (Which also isn’t the best)

Spinning the tires will give you no traction . The tiny little sipes are what grabbes the ice . Airing down let's the tire flex and the sipes grab the ice even more

I know you have a power sprayer you could wash the outside it might help seeing out the windows. I don't think the Honda would be useful on a recovery, but it might be fun to find tracks for the jeep.
