I struggle a lot on the former and sometimes I experiment too much and it ends up not sounding good. I’m nowhere near your level, but someday I hope to be!

Finding the right tuning for the song pretty much comes from experience of playing in alternate tunings a lot. I'm familiar with Open D and Open C variants so I tend to use them more often.
