How would someone be able to make it like Greenville where the exterior of the house is just a prop until you claim it and then it loads the interior

You can create some folders that include the interior under ServerStorage, and once the house is claimed clone this folder and put it in the correct house. Hope this helps :)

I have created my own house on Roblox studio today right and it has an E to Open Door prompt is there a way I can add a claim house prompt unto that somehow? Even thou I have a E to open door prompt?
