Rogan Chicken Curry | Chicken Rogan Josh | Murgh Rogan | How to make Chicken Rogan Josh | Chicken Rogan Josh Recipe | Rogan Josh Curry | Rogan Josh Chicken | Rogan Josh Chicken Curry | Murgh Rogan Josh
Ingredients:
Chicken, small curry cut pieces- 500 gms.
Cumin seeds- 1 tsp
Onions sliced- 2 medium
Green chillies, slit- 2 nos.
Curd, whisked well- 2 tbsp
Garam masala powder- 1 tsp
Ghee- 1 tbsp
Butter- 1 tsp
Salt to taste
For red paste:
Dry red chillies soaked in hot water- 5 nos.
Red tomatoes- 2 small ones, quartered
Green cardamoms- 6
Preparation:
Soak the dry red chillies in warm water & allow it to soften for around 10 mins.
Take a grinder and add the quartered red tomatoes, softened red chillies & green cardamoms. Make a smooth paste, set aside.
Slice the onions, slit the green chillies and chop the coriander leaves.
Whisk the curd till smooth & keep it aside.
Process:
Take a kadhai & heat 1 tbsp of ghee.
Add the cumin seeds & allow it to splutter.
Now add the sliced onions & fry till soft.
Add the slit green chillies and fry for a minute.
Now add the chicken, mix well and fry on high flame for 2 mins.
Cover & cook for around 5 mins.
Remove cover and fry on medium for another 2 mins till chicken pieces are browned.
Now add garam masala powder and salt. Mix well & fry for another 2-3 mins.
Add in the red paste, mix well & fry for 2 mins. Cover & cook for around 10 mins, stirring once or twice.
Remove cover, switch off heat & add the whisked curd. Mix well & switch on heat. Cook for 2-3 mins.
Add half a cup of water, mix and cover & cook for another 10 mins.
Add a dallop/teaspoon of butter.
Garnish with chopped coriander leaves.
Serve hot with roti or rice.
