Old guy here, yeah, BBC, PBS, and even the news used be like that! They shot strait and just gave us a wealth of information. Documentaries and informational programs were thoughtful and made us think.

Roghan means oil an Joosh means boiling. Since the cooking method involves braising meat in oil and then boiling it for a long time, the name Roghan Joosh is the describing the process. It is not about the color of the meat or spices being red.

I am a big fan of this lady and I have been for years. That BBC2 series Flavours of India was really great and very informative. Just one note about this recipe. I found the water content of 300ml in the recipe far too little to be on the stove or oven for 1 hour and 15 minutes even with the gas set to its lowest setting. and the oven at 170C. I cooked it in a Staub cast iron Dutch oven. I normally use a recipe from North Kashmir which includes a 420g can of chopped tomatoes.

I came here after searching Sarabhai vs Sarabhai then naseerudin shah then his son, his son did a movie called "The Perfect murder" where Madhur Jaffrey was in lead role and I stumbled here. Small world eh!

It seems to me, if you are not supposed to eat those whole spices at the end, maybe they should be easier to remove post cooking. Maybe they could be tied up in cheesecloth?

Hilarious! Rogan josh replaces ginger garlic and onion with asafoetida & soth (dried ginger powder) ...and the red colour comes from ratan jot... I understand this was dumbed down for western viewers but what she cooked was nothing different from a normal meat curry.

not dumbed down, just easy to source ingredients. In 1982 many Asian ingredients could only be sourced from a few shops in central london and a few other cities

@corn bread Jamie Oliver made butter chicken on his channel few years ago which was a joke. I am sure ingredients are easily available these days.
