They suck the moisture out of the mortar too fast if you don't.

What’s roller batter and why is it used. And how did you do it

There are 2 main ways to reduce the width of a wall/chimney breast. One is to step each course in leaving steps (get y'coat method) or tumbling in which can only be used on 45⁰ to 60⁰ angles, so the Rolled Batter is an alternative giving a smooth batter, but, it is very much a free style/freehand method as there is no way to use a level other than plumb and check both ends, and if a trammel was used it would have to be huge....but doable if the scaffold was tall enough.

We are using our standard 1:1:6 hydrated lime with white OPC mix
