Yeah, especially if you need twenty minutes to get a new angle and it's been getting exhausting 15 minutes ago... I can imagine it'll take even longer than that on certain knives, considering how wear resistant many modern steels are, how sht their geometry often is - ie lots of material to get rid of, how little pressure you can apply with that thing and how slow the process is per stroke.
