But how good are Roman chicory? We are talking about a typical side dish of ROMAN CUISINE, a salad with a very particular consistency and flavour.
Puntarelle, in fact, are obtained by removing the shoots found in the Catalonia chicory plant and thanks to soaking in ice water they curl. Then they are seasoned with a sauce based on garlic, oil, anchovies, vinegar, pepper and finally with Roman mint which should not be confused with mint.
Mint, or catmint, has a decidedly different flavor and is used for many typical Roman recipes such as Roman artichokes (I leave you the link to the recipe here 👉www.youtube.com/watch?v= 4l1QNIFZWXI ).
In today's video I will show you how to clean the chicory and how to season them with the typical sauce. Then I will also show you how I cook the leaves left over from cleaning the chicory, because nothing is thrown away in the kitchen (as far as possible)!

🥣Ingredients to season approximately 500 g of chicory
40 g of extra virgin olive oil
1 clove of garlic
10 g of vinegar
pepper
5 anchovy fillets in oil
Roman mint (catmint)

1 clove of garlic
cherry tomatoes
chili
