Compound Butter - 1 stick butter (salted or unsalted, 1 teaspoon sea salt (1/2 t if your butter is salted), 1/2 teaspoon paprika, 1/2 teaspoon minced garlic, 1/2 teaspoon brown sugar..
Steamed Asparagus - wash and trim asparagus. Place in covered microwave safe dish. Add 2 tablespoons water, spread 1 teaspoon compound butter on the top. Place lid loosely on top and microwave for 3 minutes.
Squash and Red Pepper Salad: These are squash I pickled this summer from my garden, but you can make it fresh by cutting your vegetables (squash and red peppers) into a bowl and covering with a brine of equal parts vinegar and water (enough to cover, about half cup of each) and a teaspoon salt. Add dill to taste if you like, about a teaspoon. Cover and let marinate in the fridge overnight. Will be good in the fridge for 3 days. Add black olives before serving.
Herbed potatoes: cut potatoes into small cubes, add your choice of herbs - rosemary, thyme, oregano - cover with beef broth and simmer until tender. Salt to taste depending on whether your broth is salted.
