I made them and my dough was too wet. I had to add a lot more flour to be able to handle. What happened? Ok just made them again and THIS time I sifted the flour AFTER I measured 2 cups …PERFECT!!! Thank you!

Starting with the amount of flour I gotta incorporate will work for me. Not a big bowl full of flour and guess. Maybe after I get used to the dough I can do the big bowl idea. The lard looked kinda runny? Is all lard runny or just your homemade lard.?

I really like the idea of starting with hot water to rehydrate the beans. Was your “fresh water” to start the 30 minute boil hot, also? Would be a great timesaver. Thanks.

I think those little 'sheets' are congealed fat. They probably melt slowly so that there are little pockets in the dough that makes it look airy.

Absolutely love your patience in teaching every step and the visuals helped with what the dough looks like at each stage. Just made this for the first time and I’m sad that my loaf fell in the oven😞. It was beautiful when it went in the oven. What happened? I was very careful not to jostle it. This is the first time that I’ve ever had a loaf fall in the oven. Help!!!

You most likely let it rise too long. The gluten strands get weak and collapse in the oven.

This is not the fruit lime. This is calcium hydroxide crystals. You must rinse 3 times because the lime can change your ph. You don't get a taste from the lime.
