👏👏👏👏👏 Excellent butchering Pam! My dad was a professional butcher and could section up a whole chicken in 1 minute. He taught us where to cut the skin, where to crack the joints and how to manage the knife. I'm 66 and have never seen anyone else do as good a job as he did BUT you did great!!!! This knowledge will help families fix more economical meals

So true ! It blows me away how many adults have no clue how to break down a chicken ! If I get them on sale for 97 cents a pound , I pick up as many as possible to break down ! It’s soooo much more affordable ! I had the butcher at the store ask me what I was gonna do with so many chickens ? I said “ ma’am I break them down into cuts and freeze them or can them , then I roast everything else and make it into stock ! “ she was super impressed

My mom did start buying packs of chicken parts when it was just the two of them out on the road. If whole chicken was on sale, she'd buy them, my dad would cut them up and together they'd package up the parts and pieces and freeze them. Just don't forget to label with a date

I tried once upon a time as a newly wed in the 80’s, my mother was raised a city girl, and definitely the first generation of housewives utilizing industrial convenience foods. Betty Crocker, Aunt Jimima, Sarah Lee, Chef Boyardi, Birdseye, Stouffers, etc. All familiar brands in her kitchen. I didn’t even know you could make potatoes Augratin with fresh potatoes and actual cheese lol. Gratefully my mother in law was an amazing country cook, and I also learned about real butter, my one true love! So anyhow, I haven’t tried cutting up a whole chicken since 1986 lol, but I’m feeling way more empowered now!

Another great video Pam! I've been doing a similar process for years. One tip - take the Ziploc bags out of the box before you begin. That way you will avoid touching the box with chicken on your hands. And if you take out too many you can wash hands when done and put them back without contamination.

I grew up in a very large household and every chicken we ate was dressed out the day it was to be cooked. You said you didn't have much experience with cutting up chicken , but you did very well for someone who hasn't done it a lot. I've butchered as many as 50 in one day, of course I had a couple people helping me. The most cost effective way to buy chicken is the whole bird and you have so many options for cooking it. There's only two in my house and I buy whole birds and divide them for different meals. Thank you for doing the cutting on camera for those who haven't done it before. We all learn by doing 👍

Hi Rae, I'm so paranoid about getting salmonella all over my kitchen. I guess if I clean up really well thereafter, and try to keep the juice exposure to a minimum, and disinfect everything thereafter, I should be okay? Is this issue as big as I'm making it? 😭😅

@@BubbleTeaKristin Well grocery store chicken is a high risk for it but you could always do something like layout some wax or parchment paper under/around your cutting board to help reduce anything getting on your counter.

I just clean everything with hot soapy water, rinse, then I mist all the surfaces with an disinfectant/anti microbial spray and let it sit for a bit then dry with a clean cloth. I do the same with cutting boards, knives, etc.

@@christawright2685 Thanks! For the outside of those plastic baggies where Pam is pre-portioning that are going in the freezer, do you wash them off or spray them with disinfectant also? In America at the grocery stores, they offer a plastic bag you can put around the outside of the store bought chicken bag... But in the UK, we just put the package of chicken straight in the cart and then into our shopping bags. I'm guessing maybe salmonella isn't a problem here...

Everyone NEEDS TO TEACH THEIR CHILDREN , GRANDCHILDREN EVEN NEIBORS HOW TO GARDEN .... They need to know as prices are gonna keep going up & even the ( UN ) has stated NO COUNTRY IS SAFE FROM FAMINE ! VERY SCARY ! Learn to make soap , laundry soap, an how will u wash your clothes - look for a wash board at yard sales etc .... God bless us all & pray WE CAN GET THROUGH THIS NIGHTMARE. 'That's how my mother taught me to cut up a chicken 40 years ago. My dad that was a meat cutter concurred, The one thing I would add is when it comes to cutting into pieces is to bend the bone and break it and it's much easier to cut through the joint.

As someone who learned to cut up a whole chicken out of necessity I will tell you that feeling for the joints and cutting cleanly without cutting into tge bone gives one a great sense of achievement. Excellent video and very timely. One suggestion. Every now and then you switched to cutting toward you. Take a little more time to get through the bone or meat but do not switch to cutting toward you. Poultry sheers also work well in cutting up chicken. Thank you for the free booklet. So generous.

When I was in upper elementary school, my mom tried to teach me how to properly cut up a whole bird, but I was too grossed out by the sliminess of it to pay much attention. Boy, how I wish I could pop over and ask her now, but she's in a much better place and I wouldn't ask her to return for anything! From what I do remember, you're pretty close to what she did. Good job!

A great video! I am 70 and have cut up my share of chickens but never thought to cut the tenderloin section off the breasts or save wing tips for soup. Chicken is a mainstay in our household. This is so cool! And very generous. I'm definitely going to get the book. My only tip--and I know this because I'm kind of a klutz--is to put a silicone mat or similar under the cutting board so it doesn't slide around on you. Raw meat is slippery enough as it is. But you did far better than I've ever managed. Very helpful! Thank you.

My first job at York Steakhouse here in Pennsylvania, I had to cut the chicken on occasion. They taught us to cut down thru the center of the breast first then lay them on the side and slice the wing and thigh them turn to do the drumstick. Now, these were fully cooked so it was not so hard to do cooked. 💥👍😊 Nice to see how to cut it all up raw. 🙏❤️

Oh my gosh-this was brilliant and you inspired me to try this. I went to Costco and picked up 2 chickens, printed out your recipes and dove in. It was surprisingly easy to cut up the chickens and really didn’t take much time. So far we have had the Orzo chicken (delicious) and the chicken soup (the best chicken broth I’ve ever had). I will definitely be doing this again. Thank you so much for sharing this!! ❤️

I eat a lot of soft tacos. Corn tortillas are inexpensive and I buy the stack of 48. Cooked chicken or beef wrapped in warmed up soft corn tortillas are some of my fav dinners.

I just love your everything you share. Perfect. I’m in my 60’s and I learned from my mother how to dissect a chicken. My mother is from the south and she would never buy chicken already cut up because it was cheaper. She had 6 people to feed and she needed to stretch her budget.

Oh my…biggest chickens I’ve ever seen. I’m your generation and have always done my own chicken sectioning👏🏻👏🏻 You did a great job. My grandmother used to even fry the necks and backs 😱. I love the idea of doing all this ahead. I have been just freezing whole chickens and planning a bunch of chicken meals when we thaw them out. Thank you for all you do

Susan: My parents grew up during the depression and necks, backs, hearts, gizzards, and livers were fair game for cooking and eating. Yes, we agree, planning ahead makes is so much easier to make meals. thanks for watching our channel. Jim

Thank you so much for sharing this video, after all these years I still struggle to break down my chickens, but doing this and freezing the parts and using them later really helps with the cost of food, I like to do several at one time so I only have to do it every couple of months. I was excited to get the booklet, it was well thought out and very useful, your recipes differ from mine and so I am excited to try your recipes, this is a good quality booklet that you could have charged for but you gave it for free, thank you for your time and energy to teach things that some people don't know or putting a twist on the things that have been done for years.

Hey Jim, tell Pam she is a real inspiration. I can't wait to buy my 2 chickens and get on with cutting them up, thanks for all you both do. I have also invested in a dehydrator and am loving being able to store food in a new way, I wouldn't have done that and the Mylar without you :-)
