Thank you for showing this canner. I have ordered it in case i need some quart size. You have been such a blessing to me. I can not lift the heavy stove top canners anymore and was freezing everything. Its not the solution for long term. I can with confidence now use an electric canner with my disability. Thank you.

I am right there with you. Since it is just me, no children or grandkids, I went with the IPot Max which cans pints. I can't lift anything heavy either and am getting ready to next week begin my canning journey. Did you see Dr. Pam's video on water canning citrus? I got a bag of Cuties and have the little 4oz jars..nothing like a Cutie in a little jar. lol Then I will move on to canning ground beef, soups and stews.

I have been experimenting with seeds in my grow closet and the cutie seeds came up fast and so far so healthy looking. As he grows i figure his mom will need some quarts of some things and she helps me so much. Its a blessing to make them food they can fix quick. His favorite right now is my bbq but he says he does not eat animals he loves animals. Lol

I love your channel, I just cammed 20 pints of carrots I won't live long enough to eat all these carrots , my husband said we can leave them in the will for the kids...LOL... however it's great fun my eyes were bigger than my purchase, however it all ok, I canned with my grandmother and my mother, I am now 78 years old and I just started chatting again and it's been great fun there's just my husband and me at home now the kids are gone. I've canned green beans, corn, vegetable soup, chili, spaghetti sauce. I made apple pie filling etc. It has been great fun; I usually don't can this amount of one product however as I said my purchase was bigger than my eyes. Thank you so much for the time you have taken to protect us and given us the insight and knowledge on how the process is secure and safe. I canned years ago, number I only had a water bath canner, and I did do some things that I've heard other people say we’re not safe. I think some are still doing. I’ve process green beans without pressure canning and various other vegetables, well I still here… however I do respect the fact that now there's more data to provide us with, safe processing, again thank you so much... have a great holiday and I will continue watching so please continue. Carrots are pretty easy to do. Raw pack is the way to go. They make a colorful addition to your shelves and your meals. They are great for adding to soups and stews and a great addition to may meals. You can season them any way you want after you open. Very versatile.

God Bless You Pam - I sincerely mean that, God Bless you and your gadget! I love you. I am 67 yrs old and have faithfully cared for my family for the past 42 years. I live in rural North Central Ohio, USDA Hardiness Zone 5a (lake effect snow). One power outage lasted for 13 days, but for the most part, the common outage is about 24 hrs or less. We heat with propane and have a portable generator that allows us to heat our home, run our well, keep my refrigerator, a small chest freezer, and operate my propane stove/oven. I am greatful. When this pandemic hit and I felt the food shortages, my son built me beautiful raised bed gardens, and with my stimulous money I purchased a Nesco food dehydrator and a Nesco Smart Canner. I love my dehydrator so much, I purchased a 2nd one. But, never having canned, and depending on the technology, I was still nervous about using it.I followed the directions exactly used only USDA approved canning recipes. Out of fear (food safety) I could not bring myself to put in on my families plate until I saw your "TESTING" of this canner, and this one on carrots. Carrots are a family staple and were sooo hard to get. God Bless You. It was your "teaching" explaination and your "step by step" demonstration that have allowed me to better care for my family. My father and mother did canning in a big way, 8 children to feed and we all learned from them how important cleaning and preparing the jars and vegetables was. We raised all of our vegetables and meats. I'm 77 and love all of the canning vetoes. Please keep bring all of us your knowledge on canning. I DID IT!!!! Thank you for showing me how, honestly I feel like you are my grandma walking me through all of this! I don’t know if she did canning but I’m sure she must have. I listened to this video I don’t know how many times before I got up the “gumption” to do this and I cut the plastic off my jars like you showed AND I did two round of 5 in my Carey canner and I have 10 jars of carrots!!! I’m sooooo excited! It’s the second time I’ve done any canning and my first attempt was potatoes and we LOVE them!! I have some beautiful onions and sweet onions and I’m going to try the pickled peppers and onions next! Thank you Pam you are an absolute joy to listen to as I prep my veggies and get my jars ready. Thank you from the bottom of my heart I’m on a fixed income and have been for more then 15 Yrs and it scares me what the next 15 years holds for all of us. Thank you! Canned carrots are SO pretty. I agree that is often less trouble and easier cleanup to just slice many vegetables with a good knife and cutting board rather than to use a food processor. I canned ten pounds of carrots last month (first time), some plain and some glazed. I've enjoyed the glazed ones as a side dish, and I added a jar of plain carrots (and a jar of my canned potatoes) to a pot of stew last week. Very convenient!

I thought I might try a carrot, onion, turnip, potato combo. I guess I would have to add that jar after cooking the beef and then heat through? I'm thinking they would be too mushy otherwise.

I guess great minds work and think alike. Thursday (11/04) I just finished putting up 20# of carrots myself. I started with 10# but quickly grew into 20#. I am done with canning carrots for next year and it feels wonderful. Over a years time I put up around 350 pints/quarts a year of all variety's of vegetables. My next project is a years worth of Ghee, this will be a first for me so I will be watching your videos on that. Thanks for sharing.

Oh you are so inspiring!! I purchased a 50 pound bag of carrots for $11 lol. I have been pressure canning them in pint jars thanks to this video. My first batch in this canner was chicken breaststroke, and I was so afraid they hadn't processed because of the escaping steam (even though I read the manual and it said it was ok, lol). I canned 30 lbs not long ago.. you are right peeling and chopping is a pain. I invested in a Geoffrey Zakarian mandolin. I love it..whipps right through the carrots.. carrots are so easy.. thanks for a beautiful demonstration.. hope you and Jim have a wonderful weekend..

Jim and Pam- I can’t recall in which video we recently talked but I’m making a “Grandma -Grandpa call” lol was a little emotional this morning looking at my 4th batch from the Nesco canner. Wish I could call my Grandmother to tell her. She had the most magical pantry full of beautiful jars. I helped every summer and fall and wish I could remember all the things she said “don’t forget…” when it comes to preserving. ❤Anyway Jim you asked me to let ya know how the Nesco is working. FYI my Carey (Nesco) canner instructions say to shift the valve to airtight when the machine beeps and E10 is displayed. Carey is supposedly the same as Nesco but made in Canada. Mine looks exactly the same as yours in the videos.

Pam I am so excited you an John have been such a blessing in my home. My Ma has dementia an it’s really hard I can’t remember everything she’s done with me. I’m able to come here through the years to hear the science 💕 now I come to hear the reassurance I so desperately miss. I do not have the time for my pressure canner the way I use to an thanks to you I am confident in the nesco I contacted them an they were able to send me one. I had issues getting the one I ordered an nkw they are very hard to come by selling $500-$700 😳 so I will be able to start canning soon in my nesco 💕this gives me more time not watching the stove constantly as I am just not able to walk away an listen from another room like my Ma could.. I’m so glad I’ve found your channel. I have done a little bit of water bath canning in the past, but I have been so intimidated to try pressure canning. These electric canners seemed like a great option, but I still felt like I needed lessons before I was brave enough to try. Your videos are so detailed and make it seem like something I could actually accomplish.

Watched this yesterday and went out and bought four huge bags of carrots today. I have frozen veggies in the dehydrator, beef in the pressure cooker and just froze baggies of eggs, and blueberries. Carrots to be canned tomorrow and onions to be dehydrated as well. Thank you so very much for your fantastic videos❤️❤️❤️

Thanks a lot for this very encouraging and informative video. I have been terrified of my pressure cooker for a long time. I only ever use it as a big pan with the lid off. Someone I know had an accident with his while making preserves. Today I am going to get it out of the cupboard and try cooking some food with the lid on. Then when I get comfortable with it I will try using the jars in it. You make it look easy but what I see is good preparation and organisation of the workspace. Thanks for making all these videos.

woohoo I finally was able to get a Nesco 9.5 qt canner (they have been sold out for about a year or so). We now have solar power so thought this canner would be a welcome addition especially in the hot summer months - when solar energy is plentiful. I have two All American canners which I love, but they are big and heavy and processing time is a big factor both coming up to pressure and down as well. not having to be at stovetop for extended periods is an added benefit. Thanks for all your knowledge and energy and for Jim's great videoing (and shopping). I will can up some carrots for my test batch as well 😀

What an awesome tip to share about how to open the plastic wrap on a new case of jars so that it leaves a “hinged cover”! I will start doing doing this with my new cases.

Mike came home with a large bag of french style raw green beans which I love to use in chicken pot pie. So I am telling him we will have to freeze the rest or maybe can them in hot water bath method. After checking online I realized that hot bath is not the proper way to put up green beans. Thank you my sweet lady for your great videos. So my dear husband says to me….you should have got a canner like you were saying and we could have put them up…..I tell him I am still doing research…but am secretly so happy and I do want to get the canner you are using today. Now I know I could have put them up raw, and had a question on salt or no salt, onions or no onions or/and celery. Since there is just the 2 of us the Nesco would be fine for us. I am watching for it to come on sale….maybe????

You are not the only one who isn't fond of peeling carrots. There is such a mess of peels, dirt and staining juice to clean up after. One year when I was about 11 we were given, at least, 2 bushes of carrots because we came home from school one day, Mom was a teacher, to find the ringer washer full of carrots nicely peeled and ready to drain. Mom must have said something to Dad earlier about the chore. Well. . . Mom neatly died and there was no thank you in her heart. Her only thought was "we no longer had a washing machine because how could all of that crud be cleaned out of the machine without it destroying the pump and/or motor in the process?" Each parent went their separate ways and we kids disappeared. I don't know what happened but at the next laundry day, out came the ringer washer and all went well. That machine was still going 10 years later - and it was probably 20 yrs old when the carrot debacle happened. Peeling carrots always brings this to mind. Obviously, I'll never forget it. I don't think my Mom or Dad ever did either. And the carrots? They turned out beautifully but the ringer washer was never used for anything but laundry ever again. Still my Dad thought it was a great idea. - No harm No Fowl, I guess. Think of all of those ringer washers out there rotting in junk yards across the globe. Chuckle Chuckle Chuckle.

I just finished my first round of canning carrots! I am so stoked.. Had to use half pint jars because I didn’t have pint jars when I thought I did. But that’s OK, because my husband doesn’t really care much for carrots. There is a lot of liquid in the jars and I have attributed that to the carrot slices being so big in diameter, resulting in too much space between the carrots. So, I cut them in half and did a better job of packing. Second batch is in the canner now! Thanks Pam and Jim!

Pam, I love the simplicity of the Nesco. So much so, I paused your video and bought one. Please refresh my memory. When canning (pints) of ground beef in it, we up the time to 90 minutes to ensure we stay in the kill zone long enough, correct?

Am so glad you did this video because we are plant based we eat a LOT of carrots, and have wanted to can some but every video I have watched required salt be added. This next week I plan on canning carrots. I can easily eat one pint a day.

Had to let you know I had my first homemade sauerkraut tonight as part of my dinner. Made two weeks ago and forgot it! But no mold! The recipe I followed had shredded carrots in it, tasted good!!! But I guess that kind of critique would only come from someone who grew up on it and grew to love it anyway.

Thanks for another great video! Carrots were the first thing I pressure can in my Nesco! I used baby carrots so I didn’t have to peel them. Looking forward to more videos you using the Nesco canner!
