Last Christmas since my family could not be together I not only shipped pie filling up to my daughter in Michigan I went around and dropped it off to my sisters here in town. So at everyone’s table they had for apple pie and mince pie that I had a hand in making. I also sent stews, salsa, peach and plum jam and apple peelings jelly. That made me feel so happy. And as I have told you before that was greatly due to you because you taught me how to do that. THANK YOU PAM🙏

I love that you also mentioned how many quarts (for me, pints) you think is "enough" for your family for one year. Sometimes there's a push to can TOO much. Pantry rotation is also important. I'm off to watch the Ball-Weck comparison after this. They are an investment and I would only use them for waterbath, but they are pretty as well as functional. Thank you for turning me on to Fiore de Sicilia! I made a peach pie and used just 1/8 a teaspoon in with the vanilla and the flavor was very subtle but magnificent! I won’t use almond extract in peach pie again!!

Great video on peaches. I picked up 7 lbs of fresh cherries today. Washed them, and picked the stems. They're in the refrigerator now and tomorrow I'll be pitting them and canning plain cherries for other uses over the year. (I put them in my roasted port tenderloin.) On Saturday I'll be getting 20 lbs of peaches and doing them up for pies-- IF I can get another two cases of jars. Jars here in LA are very difficult to get right now. I've got them on order, but won't know until they fill the order in the morning. Fingers crossed.

The recipe I used was slightly different in the boiling time . I followed it explicitly and it came out thicker than yours. Mine were also water bathed for 40 minutes... hope they are OK. Those Weck jars are beautiful filled with peaches! My batch of peaches last week from the farmers market had approx 2 dozen that were half bad the day after I brought them home. 😥 I went back today to see how the peaches were this week and he made it right...only charged me half cost. These peaches are bigger and firmer, too! 🤗

I have learned so much about pressure canning. Thank you sincerely for all your teaching! I have a few questions. I notice you like the Weck jars. Is it only because of its look, how pretty it is? or do you prefer them for other reasons? They are gorgeous. I ordered some of the liter size so I can do peach pie filling in them. I watched your cherry pie filling, love that too! I also noticed in another video that you used 3 clips on your Weck jars instead of the 2 they come with. Is there a problem canning with just the 2 clips? I noticed you fill them almost to the top. They don't seem to need the 1" headspace. Is that the case? I cannot wait to do your beef stew and soups as well as the pie fillings.

Hi Pam, I’ve been watching your videos and purchased the Presto 23 quart pressure canner. Thank you for the helpful information and helping me figure out which canner to buy. I’m new to canning and today made the peach pie filling. The filled jars look beautiful, but there’s a lot of bubbles. I think I let the clearjel and sugar get to thick before adding the lemon juice and peaches. Will they be safe to store on a shelve?

I love those weck jars, I do a lot of pie fillings but I honestly found that the peach breaks up to much, and for me it worse once baked in a pie. But I do like the idea of the Fiori di Sicila, going to try that, that stuff once put in the fridge last forever ( I know mine is at least 15 years old), have to watch it though that is potent stuff. Nice demo though Pam.

Hi Pam, I'm in Australia and can't get cleargel unless I pay a fortune for it. Can I use tapioca starch in its place? I've heard you can use it in a 2-1 ratio.

Hi Deborah. Sadly, there really is no recommended substitute for Clear Jel. See the link below. You could make your pie filling without any thickener and then add the cornstarch after opening--not ideal, but it might work. Hi Pam, couldn’t find a USDA recipe on how to make peach jam from peach skin trimming and pits. There’s a few KZbin videos showing how to do it. However, being new to canning I’m not sure if it’s safe to do. I’m learning a lot watching your videos and was worried because their recipe doesn’t call for any lemon juice or other acid. I hate to waste anything and using the skins and pits to make jelly caught my attention.

A really good book for canning pie fillings is "The Amish Canning Book" by Georgia Varozza. She is a Master Canner. Her recipes are excellent and easy to follow. I use Weck Jars and love them. They are a joy to work with. They also stack nicely. Would you be kind enough to share the name of your digital PH Reader and let me know where I can purchase it? Thank You. Eileen PS. I have been using The Amish Canning Book for years and this year decided to splurge and went ahead and bought all of her cookbooks. They are great.

I did a little research and only turned up this USDA booklet. Mangos are mentioned 50 times, but not relative to pie filling. nchfp.uga.edu/publications/usda/GUIDE02_HomeCan_rev0715.pdf

Thanks for including the link- great publication. Trying to find a way to use lots of Mangoes from a little grove of tress. Everyone loves cobbler but the filling is super watery was hopeful the canning process would make for a thicker more consistent filling. Have enjoyed watching your channel. Sadly canning doesn’t seem to be as universal as it used to be.

Can tapioca as a thickener be safely canned?

Tapioca is a great thickener, but not for canning. It is listed as one that should not be used. Thanks for the question!

why does your video not match the recipe? Your adding 1 and 1/4 cups of water and 5 cups of sugar. so if your taking the recipe and x's it by 5 why isn't the water 3.75 cups?

A Naturally Balanced: Yes, you are correct. Also, see: nchfp:uga.edu for the recipe (Guide 2, page 30, Peach Pie Filling). It shows ingredients for 1 and 7 quarts. You will have to adjust/convert 1 quart to 5 quarts. Thanks for the catch. Jim
