I'm a bit late to the party here 🌽 I've been researching and learning how to be self-sufficient in as many ways as is realistic due to the state of the world as of now (today is 1/22/23). Your channel has been a large part of my learning! Thank you so much for helping us figure it out and make our own stuff!! I don't know that any of us know what's going to ultimately happen on this planet. In any event I pray for all of us for the strength, endurance and resolve to keep going.

Thankyou Jim and Dr. Pam, this works great with the Red corn and the Blue corn! The red corn makes great bread, hominy, hush puppies, grits etc. Love the blue corn for tortias!

This is so so interesting ! If I had had you as a science teacher, I think I would had actually enjoyed science😂. And I now understand why a lot of things my grandparents did to survive were necessary. Things they taught me are coming back to me and I’m glad because I’m going to need them very soon! I am Mexican American and I lived in Mexico for a while I never heard of using lye until I came back to the USA. I’ve never made tortillas myself but I did always hear of two main ingredients, water and ground white lime stone.

That little piece of the end is called the germ and it is very nutritious. My son worked for years grinding corn for animals feed and he knows all about the process of saving the germ.

This was such an interesting video. When you said in your last video that you would be using the corn you kept inside rather quickly, I wondered how. Now I understand. I grew up on field corn so I bet this tastes really good. By the way, it's none of my business but I'm glad you have kept the curly locks. It makes you look younger and refreshed. So pretty.

My dad always planted Golden Dent corn for our animals and we lived eating it, too! We would cream and freeze it and we also ground it for our grits and corn meal. I like it much better than sweet corn.

I got a 50lb bag of calcium hydroxide from azure standard. I use it to water glass eggs. Glad to know another use for it.

I grew up in the south with white corn meal to make our corn bread. My Dad had to have cornbread almost every night and would only eat the brown crispy crust on top. 🙂 Great video.❤️

Hi @roseredhomestead , my great grandmother, God rest her soul, died in the 1930s from Pellagra. While there have been people from all over that have passed away from Pellagra, in the South, it was a huge problem, being that their main food source was corn (grits, cornbread, corn cakes and corn meal mush). My grandfather, her son, had life long health issues and I believe that a big part of that was from corn that wasn't nixtamalized. Thank you for doing this video.

Another great video! You take the mystery (and slight fear) out of nixtamalizing corn and have made it look fairly easy. Am glad you mentioned not putting the yellow alkaline water down the sink because you have a septic system…don’t think I would have thought about what it would do to our septic system. .. Thank You 😊

I guess you could neutralise with some acid, but there's probably a good use for the alkaline solution

Oops. I’ve done that, put the lime (calcium hydroxinate) and corn water down the drain and into my tank. I’ll remember not to next time.

It would have never in a billion years crossed my mind not to pour the water down the sink drain...I never put grease in the drain but honestly never thought about anything else going into my septic system..I love that she is ALWAYS teaching us something that we never think about!!

It’s fascinating. Other than corn on the cob, and sweetcorn, we in the UK don’t have any real heritage recipes for maize/ corn. I do find your videos so educational. I don’t think it’s something I’m ever going to do, but I love learning and have insatiable curiosity so please keep them coming.
