Knowing how to improvise using ingredients you have on hand may come in very handy in a long term grid down situation. We show 3 holiday sides that we made using only ingredients we had on hand, and it was a challenge. We now have a list of additional foods that will be going into our food storage!

I am in the interior of BC. we are in a deep valley surrounded by mountains and our mountain routes in and out have been either washed out of mud blocked. Many people in other parts are without power. thank god for emergency preparedness! because of channels like this we are well prepared and do not have to worry about the "panic buying" that's now happening. and OMG powdered yogurt? every time I watch this channel I get new ideas! ty ty

Substituting ingredients in a recipe is how I grew up. Firstly, the ingredients weren't always available in our area. Secondly, we couldn't always afford all the ingredients. Throughout the last 30 years or so, we have been able to purchase most anything we wanted, thanks to a global economy. That time of abundance is rapidly coming to an end. What you have demonstrated today is an invaluable lesson. I think this will be a trend and you will not only be that "Woman with a Gadget" but also a trendsetter ;) As well as changing our expectations of what foods will be available we also need to change our taste expectations. The result might not be exactly what we used to make, as you said, but different is ok. Horrible (like the attempt at Labna) isn't ok. Thank you for also showing the failure. Hopefully people will be encouraged to experiment without fear. This is how great recipes are developed. Thank you again for sharing your vast knowledge and helping many reawaken or learn for the first time how to stock a pantry to keep us through the lean times ahead.

I agree with you that todays video was an invaluable lesson! I think we could find ourselves eating for sustenance not for the pleasure we’re so accustomed to today which makes having a few special but valuable items stored that will be encouraging as we adjust.

What fun! Honestly, I was raised in the appalachian coalfields and we were poor, but we grew popcorn, made "snow ice cream" & popcorn balls with homemade surgum syrup. We didn't get "treats" often but my parents always did their best to see we had special little things given with love and happiness. The excitement of making treats was almost as good as getting them! almost 😁

You have brought me so much awareness to preparedness this past year or so. I have always kept lots of extra foods on hand, but since watching you, I have done more. I am, in northern BC and if you have seen the news the past couple days, the southern part of bc has had terrible flooding and mud slides. Us in the North are now experiencing food delivery delays and shortages. The shelves are getting empty, in two days. I am so happy for my well stocked pantry and cold room. Thank you so very much for your channel

Lyn, I live in Western Washington just south of Seattle. We have also be inundated with rain. We have had a reprieve for which I am grateful. Some areas of flooding but not like southern BC. My thoughts and prayers are with you and those dealing with the flooding. I’m glad you’ve done some preparing and have extra to sustain you.

I’m not a fancy cook and use a cookbook for almost everything other than the basics. Thank you for the ideas. I can hardly wait for you and Cindy to complete your pantry cookbook, could really use it for my food storage.

This is a great idea! I tend to want to "save" my canned food. I will make myself use them! I watch all of your videos, sometimes more than once so I don't make any mistakes. You are a wonderful person to share your knowledge. Thank YOU!!

Agree as I also was saving my canned food. I've done some pantry cooking as an experiment. I've had a couple successes and one soup with too many ingredients that wasn't popular with the family. Good to practice.

That mushroom dish looks and sounds amazing. They all do but I do love mushrooms of many different kinds. I'm lucky enough to have found mother loads of wild edible mushrooms this year. I also planted morel mycelium in an old fire pit this year so here's to hoping for a bumper flush of morchella this spring 💚🙏🍄

Wonderful video, Dr. Pam! Thanks for the great ideas! I’ll bet you can re-work the sweet potato dish - maybe with ghee, cinnamon, nutmeg & your honey? (Living in the East, I stockpile local maple syrup as well as honey.). I make & serve galettes fairly often - I bake them on a pizza stone to get the bottom crust done, then run briefly under the broiler, if needed. I serve them on my pizza peel or a wood cutting board.

I think you should do many more recipes with dehydrated foods!!! There is a huge lack of these type videos on youtube. Plenty of how to dehydrate, not enough on how to use. Consider more pls! :)

What a twist you have given those recipes! I like achieving completely different flavors with a simple substitution or two. You did a fine job. They all look yummy.

Great job and a great idea to make special side dishes using only food storage. I love that you improvised and learned what worked and what did not. Best of all, the fails on camera! We can all learn from a fail as well as a success. I’d love to see more on freeze drying. I just ordered mine and I’m excited to experiment!

While you were BUSY making these dishes w/ what you had in storage, I thought of the Anne Frank family while they were hiding from the Nazi’s. 2 Thanksgivings and Christmas’s came and went in hiding, and if they had this storage available for making these things that we might think were not so desirable, they would have thought they were eating like royalty. We are certainly blessed. I think I would like to be your neighbor when the Grid goes down or a catastrophe happens. I was sad you didn’t care for the sweet potatoes. They looked delicious to me, and when you said you wouldn’t serve them to company…..my heart dropped. I was all ready for a bite!

my husband loves mushrooms. I will definitely have to try that with what I have. love the humor about Jima that was so funny.. I was just thinking to myself what would I need to go get to make some of these, . after all, if grid goes down we will have to adapt and make do with what we have. Blessings to you and Jim.

This was a really good video and it emphasized the need to include some little extra somethings in our food preps because it will boost morale during hard times. This was a fun one! I couldn't help but think of a scene in the Hunger Games books where Katniss sits down at a "fancy" (certainly fancy to her) Capitol meal and is thinking through all the substitutions she would have to make and work that would go into recreating the meal at home where they lived very poorly -- wild turkey in place of chicken, goat's milk in place of cream, etc.

Thank you for mentioning sour cream - I wonder how the sweet potatoes would taste of a bed of sour cream rather than what you used? And thank you for the potato-leek recipe! We grew leeks for the first time this year and were VERY pleased. I'd much rather grow them than onions. Bonus was they dehydrated beautifully and the smell was divine! We just bought 50 lbs of potatoes on sale - the freeze dyer is going to be busy :-)

Absolutely delightful and more than that - encouraging!!! I can just visualize me trying to orchestrate that 3 dish presentation substituting the whole way. Cooking from stash will no doubt be a much bigger challenge than we ever dreamed it would be. Some are addressing food fatigue because of the lack of fresh ingredients which can end up so bland. I’ve been trying my hand at flatbreads (no electricity is the challenge) over gas as a sub for baked breads as I think bread is a huge staple for filler meals. Most of us have tons of rice, and beans but aren’t very astute in how to prepare them esp in the northern states. I would love to see some ideas and even recipes with those in mind. Thank you for all your work putting these vids together. You are a busy woman so I appreciate you and hubbys doing these vids ever so much.

Very clever substitutions and I must say the potatoes look delicious. Reconfigure mushroom dish as a savory fried or baked pie, or put mushroom mixture in ramekins and top with crust. I love mushrooms. My fancy sweet potato would be individual serving. No cheese. Slice remaining crust into triangles and serve on side, You could also sprinkle with parmesan cheese. Many possibilities and you can be fancy without being complicated. This was very though provoking for me. Thank you. Good video.

Pam, I just got a freeze dryer and did 4 trays of sour cream. It powdered beautifully. I can do canned yams, green bean casserole and stuffing out of food storage easily. Last year I waterbath canned fresh cranberry relish that contains citrus and apples. Turned out awesome!

@@cherylpresleigh6403 , my sister-in-law makes it. It has fresh cranberries, chopped apples, whole oranges including the peels and some raspberry jello powder and some honey. You can add other citrus if desired. I Googled a recipe for it until I found one that sounded like what my sis makes. I put everything in a food processor or blender and pulsed until It was all tiny pieces. She makes it fresh and serves cold. You can keep extra in the freezer. I realized I could can it so I can have some any time.

This was a lot for you both to take on!!! Results were good considering all the re-hydrating going on and substitutions / changes to ingredients.. Sophistication in cooking with dried and canned foods, plus new ideas for foods to dehydrate or freeze dry. To finish with a sprinkle of humour!. Certainly a win and I shall add cream cheese and yoghurt to the list for storage.

The potato dish was basically a good potato soup in a casserole dish! Pretty much all of the same ingredients. The only thing missing was ham or bacon. I put bacon in my potato soup. 😊

Thanks for all the great content! I just got through processing my garden veggies and apples, with only a small batch of tomatillos, a few pounds of tomatoes, and 9 pie pumpkins left. Whew! Next I am going to start canning soups, beans, and chili. A freeze dryer would be awesome, but out of my budget. My little freezer is full, so, I will can as much as possible. I'd also like to have some good dehydrated soup mixes. I hope your book and/ or channel will include some dehydrated soup mix recipes. I am going to start making my own pasta soon, as well.

This was a great experiment to show us how to use what we have. A good cook does this especially when you don’t live near a store. Our grandmothers did this on a regular basis. Thanks for doing this. I appreciated it very much, helps us think out of the box for substitutions.

You are such a joy to watch. I loved all the ideas. Not much on sweet potatoes, but the other two dishes were right up my alley. I'm gluten free, but can make GF pie crusts, and the dried mushrooms are great. I love all kinds of cheeses, so am going to have to get busy trying to figure out how to preserve those some way. Will also be dehydrating things soon when I get my dehydrator, and especially leeks, etc. The potato dish is my fav also :) Love from Susan in Florida

Pam the best substitute to heavy cream is to melt a percentage of butter and slowly whisk in whole milk, would work well in the application you made, you should try it with your powdered milk and see if it works with that. I thought of you today when I used my maslin pan for the first that I have had for 7 years, I love it, a vanilla peach jam, delicious. Have a good holiday.

Just a suggestion on the galette - pre/par bake the crust (put filling just under the crust to maintain the shape), and then fill with your choice of filling, and finish baking. I love your videos!

Oh wow, could you show us how you dehydrate yogurt...I don't have a freeze dryer. I have tried making yogurt from powdered milk....not so yummy.....sure would love it if there was a way to do it to where it is palatable. I have chronic gut issues and am worried when we won't have fresh dairy available in the future. I take probiotics and do other ferments, but yogurt is so good!!!! On a side note, I bought 2 pounds of cheese wax so that I can start putting up hard cheeses in my pantry. There's a lot people can do for food security! Bless you Rose Red Homestead!

I agree that we need to have variety and some extras to make dishes a little bit more appealing for our families now and again. Now I will have to ponder what else I can add to the pantry. 😉

I love watching your videos, you remind me of my grandma because of your red hair and teaching me kitchen stuff :) I sure do miss her. We lost her a year ago to cancer :( Thanks for your videos, i hope you have a wonderful holiday season and god bless

I don't know whether you have addressed the safety issue of having a website or not, but I really wish you would consider it. I am an older lady and I see so many young people giving out so much information that would allow a not so nice person to locate them. One young lady just did a tour of EVERYTHING she and her husband own and have preserved, it is quite considerable. I only say this out of concern for everyone trying to do the same wonderful service you and Jim provide for all of your viewers. You both set a fine example for all of us. As things continue to deteriorate, people will become more and more desperate.

Great video Dr. Pam and Jim! I love to add the little fancy dishes now on occasion..fresh herbs or things like home canned fruits(whole cherries, pineapple rings, apple slices, etc) as well as presentation, for example my husband loves to make pineapple upside down cake (more like a pound cake..lol) the home canned pineapple rings, cherries, and pecan halves turn it up a notch..pies too are wonderful..sometimes its' the small things that can cheer up the family meal..I agree about the need for the powdered yougurt, sour cream, and freeze dried cheeses. Blessings.

So interesting! Just shows how really prepared you are! The small items you do not have stored may be the ones you really need to lift your spirits! How brave you were to taste test live! I would be afraid I would have to spit it out! haha!. Thanks for the recipes too. I save all kinds of recipes to my laptop's hard drive in the event that I cannot go online.(I have a solar charger) and it reminds me why I do that. I save recipes for items I have not even ever grown or purchased so that I have a variety of recipes in an emergency. Maybe all I will have to work with are parsnips! Thanks again!

You've got me rethinking some of our FD tactics. I've been focusing on one ingredient at a time. Now I think I need to expand what we are FD'ing and maybe do combinations. Great video. Thank you!

Yes, we usually freeze dry two different items at the same time without a problem in four trays. I think we freeze dried three three different items in our four trays early on. Jim

I have wondered what I would do if I had to rely 100% on what I have at home. This 'practice' run you did was eye opening. I also want to try various bread recipes using my ghee. Thanks for all you do! I appreciate and love your videos.

This was a great video it was like you said you think you have a lot but when it comes down to make something a little up scale do we have it. I know I wouldn’t but now thanks to you I will be making some adjustments to my storages pantry. I love your context to help us all to think about what our family needs to survive if something happens.

For cream, Could you add a little bit of ghee to some powdered (reconstituted) milk, to add the butterfat back? This video was very inspiring to me! I started thinking about all of the things I can freeze dry when mine arrives.. not just assorted vegetables, fruits, prepared meals or leftovers, but the things you don’t think about like sour cream and yogurt, cheeses, and things that you don’t realize you should’ve stocked, until you need them and don’t have them..

I think you did a wonderful job on this experiment. I've only really just begun to have some inventory but nothing to brag about. I'm hoping to begin to can sausage and hamburger and beef chunks. Great job on improvising! Loved the potatoes au gratin. I did dehydrate a tub of sour cream and powdered it and it is fine. I make fruit galette often but use a much thinner crust. I will try the mushroom galette but thinner crust. Love all your wonderful ideas and suggestions. Keep smiling. Thank you Jim for making Pam follow through😁

Miss Pam, I am SO proud of you for keeping to your rules, even if Mr. Jim had to make sure you remained accountable (don't give Me. Jim too hard a time, he was keeping you honest to your rules)!! My point was if I am simulating a grid-down situation, I use what you have. If I break the simulation and buy the needed item(s) in grid-up at the local grocery store, what have I learned about my integrity and ethical standards, accountability and creativity, and meal preparation, safe food storage, and survival skills? In other words, how do I make the outcome better the next time? Jim

I have two freeze dryer trays, of sour cream, in the freezer right now because earlier today I watched your Beef Stroganoff video. My hubby spent the day canning Beef Stroganoff and we plan to open a jar of it for a taste test. I think we will try to do a dinner with everything coming from food storage.
