I read that he & Sophie wanted it that way to escape media interest when they had kids. Legally though their children are Princess Louise & Prince James & they can use those titles when they're older if they wish.

I believe at the time they wanted a much more low key wedding than either Prince Charles or Prince Andrew. They didn't have all the pomp.

Actually, HRH Prince Charles is the Duke of Cornwall, though he is better known as Prince of Wales. Otherwise, yes, British royal traditions are often confusing.
