Gjetost! My favorite! You should cut that into paper-thin slices with a cheese slicer, the kind that looks like a paddle with a slit in the center. The slices should be so thin you can almost see through them. They will melt on your tongue. When it is cut that thick, you can't really get the true flavor.

Yeah, I first had this when I was in Scandinavia on a smorgasbord one morning after that I would toast this very dark bread put thin slices on it until it melted. I have a block of this in my refrigerator right now.
