I image it depends on the camera and settings. There are chest harnesses which hold the camera in position. Usually, a lot of footage is recorded and then edited down to a much lesser amount using the best portions of the filming, much like movies are made. I don't make video content so I don't know from experience, only from what I've learned watching others.
