I can imagine how good that tastes without any sauce. I grill Iberico Secreto once in a while, with that cut, it tastes somewhere between beef and pork. Worth the try.

I've had Iberico ham, but not ribs. Good call skipping heavy seasoning. I'm pretty sure the Iberico pigs are fed a diet of primarily acorns, and that comes thru in the flavor.

Iberico pork is amazing. I don't even eat pork here at home. In Spain, I eat Iberico pork sandwiches every chance that I get. I'll have to try Iberico ribs the next time we go to Spain ( in 122 days!!!).

Good content and editing. Keep up the good work. What do we want to see next? How about an honest walk through of each of your cookers, past and present, pros and cons, budget and top end. Sourcing the best meat, budget and top end. Best charcoal, budget and top end. Favorite accessories, what worked, what didn't, why. Maintenance, especially, KJ's. SDBBQ has done this but as a KJ3 owner, I find his methods and technique a bit confusing. BTW, Mad Scientist BBQ Jeremy Yoder uses only S and P on his ribs and swears by it. I did it about a month ago for a dinner party. The attendees are still talking abou the ribs. I think they taste more "porky" which isn't a bad thing but I'm conditioned to the old methods of slathering sweet stuff on them.

this is the 2nd iberico rib video i saw today. I saw them at my local wildfork store and almost picked some up. it's crazy how fast they cook but makes sense since they are very fatty. be curious if after saucing you can still make out the richness. guess i'll have to give it a shot

I don’t think a little sauce would hurt them. I just wanted to the full experience for the first time. I’d say these are a treat, but I’d do Berkshire or Heritage as my go to every day rib. 🍻

I have tried them side by side with a Porter Porter Road baby back and them and to me Porter Road was better.

That’s really a personal taste thing. That aren’t an apples to apples comparison as they are a fed a completely different diet. You should try Berkshire ribs vs Porters ribs. Berkshire would be a closer comparison and I’d bet you’d love them. Porter Road does have some good ribs though. 🍻

I have a bag, but I typically don’t use blends. I prefer all one flavor personally, but I’ve heard some good things. 🍻

I like all my of my meat with out bbq sauce cause it does not take away from the smoked meat ,I think the bbq sauce is over powering and over takes the taste of the meat
