Looks delicious Jake! Which Diana Sauce do you use on your ribs? I've tried Original and Rib & Chicken. And I like tge Rib & Chicken better. It has a little more vinegar taste. I like a litte heat, and not much sweet. I'll wait your reply. Thanks! God Bless!

I use the black gourmet original one for ribs. I’m not much on heat and I love the color of it. Both are good though! 🍻

that is same method I use other than I use the slow roller and 1 apple log in the charcoal basket

So would the higher temp of 275 and approx. 3 hours or less duration apply to baby backs as well that has less fat or would you dial the temp down a bit for baby backs?

What is the different effect of apple cider vinegar verses apple juice in the moisturizer spray?

Probably minimal. The vinegar has a little acid to help break down the meat and tenderize but I doubt it makes a huge difference. 🍻

Thanks! Unfortunately, untrimmed brisket is not something I'd cook. I don't really like a lot of fat to begin with and that would be a waste of meat for me to cook since I wouldn't eat it, to be honest. 🍻
