This is the 5th different loaf of bread I have made from your various recipes and all 5 turned out fantastic without a single alteration. Also, you seem to have nailed the right hydration for these free form loafs as none of my previous attempts did anything but spread out and never up. You've put the fun back into bread baking.

Mine came out perrrrfect, I love the pattern on top of the bread and how soft the texture is!! (Although I find 2tsb of salt is too salty, I'd use one or one and half tsb next time~) Love your channels! ❤

Titli, can you do a term translation for American ingredients? What is strong flour? We have bread flour, pastry flour, rice flour and all purpose flour. Another video you suggested a sugar I had never heard of. I think it might be equivalent to Turbinado sugar, but I am not sure.

Susan Marshall Wow, what is this constant bash on American things? I checked up on this strong flour term later on. So I was curious and looked at my bag of King Arthur Flour in the pantry and it has more than enough gluten, and that was the unbleached All Purpose flour as well as King Arthur's bread flour. King Arthur flour is made in Vermont using U.S. wheat. Sure, I'm sure there are some cheapo brands of flour out there that's utter crap, but you know something? EVERY country has it's good stuff and bad stuff. That's regarding people, food and other products.

I believe that bread flour can be substituted for strong flour, bread flour is very high in protein. I've used the King Arthur brand before, very good quality. Cheers from northern Ohio.

you always say strong flour which to me means bread flour but next to the "better for bread flour" at the store I found a "better for pizza & pretzels flour" and I can't find any information on what the gluten content they may be referring to - any ideas?? love your bread videos - please keep them coming

It depends on where you live. In Canada, our all-purpose unbleached white flour has a gluten content of 13% to 14%, depending on the mill. This is roughly equivalent to "strong flour" in the UK or "bread flour" in the US. It makes excellent bread, as I can attest from over 35 years of bread making. The flour we have that's labelled "Best for Bread", etc., appears to be a marketing device more than anything else. I haven't found any appreciable difference in the end result when compared to our all-purpose flour. If I can dig up the links I used to have about international flour comparisons I'll post again.

that would be great - the "bread flour" I use does make a difference (I firmly believe it depends on the brand) but when I saw the better for pretzels I was wondering and couldn't find a thing about it - next time I am at the store I will right down the brand name so I can check it out - I love making bread but I can't eat too much of it so I have to make what I eat taste the best I can get - lol and that fluffy stuff they sell in the stores to me is not bread it is almost not fit for the birds!

Does it taste "potato-ey" Titli? Can one tell this is not a regular loaf? Considering my appalling bread baking history (whole wheat , hard as rock loaves) my kids pretend to gag etc.., when I mention baking bread- not totally unjustified, I concede. Why the butter and oil? I really like your style but I gave you a thumbs down because of the butter and oil. There's really no need for any of that to make a superior loaf of artisan bread.
