This rustic granola recipe with coconut, dried cranberries and apricots, is one of my favorite granola recipes. With a big glass of cold milk, it is the perfect Christmas fall and winter treat.

Toasty coconut chips, chopped pecans and big chewy pieces of dried apricots make up our favorite granola recipe. It’s the perfect snack for my forever hungry brood of young people. They love it over some honey sweetened yogurt, or drowned in a bowl of fresh raw milk. I usually double the recipe and keep it out in a glass canister on the counter at all times.
Ingredients:
3 cups chopped nuts- I use walnuts and pecans
8 ounces coconut chips
2 cups oatmeal
½ cup honey
¾ cup melted coconut oil
¼ teaspoon salt
1 cup dried fruit- I use ¼ cup each blueberries, cherries, golden raisins and apricots
Instructions:
Preheat the oven to 350 degrees.
In a large saucepan melt coconut oil on low heat.
Stir in the honey and salt.
Add the chopped nuts, coconut chips and oatmeal.
Spread the mixture in an even layer in a 9” by 13” glass pan.
Bake for 30 minutes, stirring halfway through.

Watched this five times.... Once for the recipe....and four more to keep me company while I made it! Yumm-O! I’ve made granola for 20 years....and, this recipe is a keeper for sure. Thanks for sharing and being so in-depth and precise....yet sharing how to vary it up. I used dates, figs, raisins and mango...all chopped up teeny-tiny! Otherwise, I followed your recipe exactly. So good! So very, very good!

I’ve been making this for a few months now. My husband and I are cereal people and this is the best recipe around. I do add just a little more maple syrup. Like Lisa said just add whatever you like. Thank you Lisa!

I made the granola this morning. I used agave instead of honey and added some vanilla. I’m dividing it in half plain and with fruit. Can’t wait to try it. Smells heavenly!

I encountered one problem with this recipe..... It’s soooooo good that I can’t leave it alone!!!!! Lol! I used apricots, blueberries, and cherries. Absolutely delicious! Definitely will be making this often. Thanks for the delicious recipe.

I like to toast my oats in oven for say...10 minutes before I add them to the mixture. Yum! Keeps them crispy too. I really loooove granola.

We use apricot because they are a favorite in our home, as well as other dried fruits like blueberries and figs. 💖

I would like a video of like all the jar goods that you usually always have in your home and then what you use them. Eg: you have 30 Jars in your pantry and you use them mostly for..... I dont know if this makes sense.

@Mara A You are right about the glyphosate! But GMO grains, even organic are so very different than before it was genetically modified. Their genomes are different, even the number of molecules, leaving our body unable to utilize what nutrients ARE left. And some GMO foods (including corn) are referred to as "roundup ready" And they are literally putting the glyphosate directly into the genome. Your awareness and concern enough to comment tells me you would prob like to see this documentary, which, btw, was touted as nonsense and ill informed, but now, in the aftermath of the Monsanto lawsuits, Gary Null is becoming recognized as a leader in exposing the truths through his documentary. Also, if you're interested, I read the minutes in the 1st California lawsuit, (Dewayne Johnson) , And sure enough, Monsanto could NOT And did not have evidence of research of their "scientific studies" they had been claiming through paid misrepresentation and self appointed journalism, And may even be sued by the state of California for fraud! When I make granola for my family, I usually only make enough to last for a week but you could probably get a couple more days than that. Hope that helps!

I've tried making mine twice. Both times it's oily and the second time I used less oil. I can't figure out why. It's delicious in flavor that's for sure, but just oily. Any suggestions?

I want to love this recipe but oh my goodness I nearly bent a butter knife trying to pry the granola off the pan. I need to use a lot let oil I’m thinking, it was much too soaked.

Random, unrelated question: how do you prevent water/dirt from leaking out of the terra-cotta pots in your window without a saucer underneath? I love the look but don’t want to ruin surfaces.

With ours we take pots outside to water and bring back in when they've stopped leaking. Also gives the plants some time in the sun and fresh air. Perhaps she does the same!?

I'm curious if you have ever tried a soaked granola recipe? (So any grains, nuts, and seeds in the mix gets presoaked to release phytic acid.) I would love to hear your experience, if you've made it before. ☺

Yes! I have soaked grains before. I just leave them on the counter over night in a glass bowl, in water with some apple cider vinegar, cover them, and cook them in the morning.

@@FarmhouseonBoone Thanks for the quick reply. Hm, I might give it a try. I've noticed that soaking brings out a nutty flavor, kind of bitter, in my grains. But maybe in a granola recipe that flavor would be complementary. ☺

I like to use kitchen shears to chop my dried apricots. Do you ever use this homemade granola to make granola bars for your kiddos? Have you tried pecan pieces, chopped dried apples, and raisins…either dark or golden?

yes...if you want it that way just do not break the pieces when they are stuck together. If you want it in more individual coated pieces just keep stirring really well so they don't clump or break them to separate

Hello, thanks a lot for this recipe, I love watching your videos:) I am just surprised by amount of sugar (honey) you put in this granola - I usually put 2-max 3 table spoons for that amount of oats, nuts and dried fruits and it is already very sweet. However, this may be a difference between American and European cooking (I am from Poland, Central Europe) - usually I put 1/3 of sugar from american recipes and thats enough for us. Best greetings!

@@jessicarich7506 omg, even more? :) It is funny how the taste is related to geography:) Currently I am also on low sugar diet because of pregnancy related diabetes, I completely stopped to add sugar to my food - it is amazing how sweet apples or carrots feel just after few days:) We are all so overdosing it so we cannot even taste fully our meals:/

@@lesnajustys Yes and agree on cutting out sugar. We did and only use raw honey now. When I tried some chocolate after a year of this, it was terribly sweet. Which was disappointing in one sense because I love chocolate lol. But, happy to have been turned off of it now :) Also YES to carrots tasting sweeter. I never enjoyed them until now. Only ate before because they're good for me :D You might be interested in watching Don Tolman on here, especially his discussion on eating Avocados during pregnancy!

If you're in America (I don't know about other countries) call your local co-op grocery store and ask them or, if you can find a raw milk farm, they would be good to ask too and probably more local/cheaper.
