I've made a mistake about the Cocoa powder - Dutch process is alkaline, so less acidic.

And generally the more alkali used, the darker it gets, so the cocoa used in Oreo cookies is heavily dutched and almost black…

I made this with Rum and it is wonderful. Turned out great. Wonderfully moist. This was actually the first cake I ever made from scratch. I had the thought about the batter that without leavening it might make an awesome brownie batter.

I think you could heat/warm up a jar of Polaner's All fruit rasberry jelly and possibly thin it out abit with water on huice of some kind and makea nice raspberry glaze.... haven't tried it but have thought about it a lot...

I've only had 1 bad egg in the 45 years I've been using them. It was actually about a year ago. I had bought some farm fresh eggs and thankfully I was just frying an egg to eat. I was honestly shocked. Thank you for showing how most people do things. It's greatly appreciated.

That's a beautiful moist looking cake Glen. I'm 60 and have never found a bad egg either, but when I'm making eggs to eat, I usually like them over easy, so I always crack my egs into a bowl, then if I break the yolk I can change plans and scramble them.

I have been baking and cooking my whole life. Most times I crack my eggs in a bowl...except for things only I would be eating, or things that is easy to fish out egg shells from. Otherwise, I crack the eggs in a bowl. I also add flavourings, like vanilla extract, to the eggs in the bowl too. I like to measure out the ingredients and have it ready to go when I bake.

I agree with Glen. I like the cake. When it comes to icing/frosting, a thin crumb coating would be enough for me. I prefer a nice, flavorful glaze.

I’d stop the mixer while cracking the egg in cos it would be mixed in before I noticed the shell but I would never crack into a separate bowl as my main concern when cooking is how to minimise the washing up.

Hey Glen! You ever tried swapping some chickpea flour out in a cake recipe, like about 1/3? It is gives this deep nuttiness flavor when baked that has the presence of subtle peanut butter without the overwhelming flavor punch that tends to rise over other flavors. It goes great with a whisky / butterscotch recipe.

I am close in age to you Glen and I have never seen a bad egg either. I don’t remember if Home Ec was available in school but I did not take it if it were. My mother is a good baker and she always adds eggs directly to mixer. I followed her example. I think I would enjoy Dr Pepper over Coke. You can keep the glaze. I am a “cake” lover too but I did think a spoonful of whipped cream may have made a good touch. Thanks for putting these videos out. I enjoy them greatly.

If you're unsure about an egg being bad - get a cup of water, and put the egg into the water. If it sinks straight to the bottom, it's good. If it floats, it's bad. If it bounces a bit before it settles on the bottom - use it next. We buy a dozen eggs and usually take some time to use them, so I use this method to test my eggs if I'm unsure how old they are.

I keep bringing up those early Robertson Davies novels set in a small Ontario city based on Peterborough. Gin comes up in some of them but the big drink is rye. I’ve come to think of rye as quintessentially Canadian but for all I know it isn’t.

I have a hard time finding rye in the US. What is generally termed “rye whiskey” in Canada is a blend of various whiskeys made from different grains - not just rye.

When I was little and we lived near Baskin-Robbins, my favorite was a scoop of daiquiri ice over mocha in a chocolate waffle cone. So anyway, I was thinking a lime brown sugar icing would be good over a version of this with coffee.

For the side, I recommend only using the “full strength” ones. Aspartame breaks down at oven temperatures and the two amino acids that are esterified to make Aspartame are quite bitter. I’d be more for using dark or golden rum over rye whiskey, or perhaps a mix of darker sugars instead of all white sugar. The crumb on your cake looks pretty darn good.

That’s the question I’ve had since watching,I’ve had bad eggs and always use a separate bowl. I also figured out from watching….the egg question answer is the same as the sticky liquids and spraying the measuring container question.

My grandmother was the one ehobtaught me to crack eggs separately and one at a time. I think that was because there was a chance one msy have been missed in a previous days gathering. Only once have I cracked a bad egg. It smelled terrible and was black inside. I think this cake would be fun as cupcakes.

I've had only 2 bad eggs in 50 yrs from store bought eggs. One was in the 80's cooking with my grandmother and I had one this year. I will usually crack into the mix unless there is a lot of product or effort already in the bowl, then I will crack in separate dish.

Why was version 2 overly "moist"? Was version 3 adjusted in some way? It looked great and from your comments it also tasted great. When I was experimenting with drinking in college, I remember liking rye. Never had it with Coke. That I had with rum. But drinking and I parted ways around that time because it made me sick. I had a bad egg, once. Hickman's brand, the rookery is girls only, but when I cracked an egg into the rest to be scrambled, it was GREEN! And there was the corpse, mostly liquefied, of a chick. Wings and all. I put the carton in the freezer, and called the local chicken ranch. A lady came out right away, and took it. She was as shocked as I was.

Probably, but there are also two cups of sugar, so sugar/calorie savings would be minimal. Using artificial sweetener results in a strange texture in baked goods

Check other comments - The aspartame often breaks down into unpleasant constituents when baked. I also would have to go to the store to buy real coke for this cake.
