2 كوب (260 غرام) طحين لجميع الاستعمالات
ملعقة صغيرة خميرة فورية
ملعقة صغيرة سكر
نصف ملعقة صغيرة ملح
2 ملعقةطعام (30 مل) زيت نباتي
نصف كوب + 2 ملعقة طعام ماء دافىء
كمية الزيت مع الماء تساوي 3/4 كوب سوائل
2 كوب (480 مل) زيت نباتي لقلي العجين
1 كوب (190 غرام) عدس بني
6 اكواب (حوالى ليتر ونصف) ماء لسلق العدس
ثلث كوب (80 مل) زيت زيتون
كوب ونصف (200 غرام) بصل مفروم
2 فصوص ثوم مهروسين مع ربع ملعقة صغيرة ملح
نصف ملعقة صغيرة ملح
نصف ملعقة صغيرة كمون ناعم
رشة فلفل اسود
Ingredients:
2 cups (260 g) all_purpose flour
1 tsp instant yeast
1 tsp white sugar
1/2 tsp salt
2 tbsp vegetable or canola oil
1/2 cup + 2 tbsp warm water (oil and water makes 3/4 cup total liquid)
2 cups (480 ml) vegetable or canola oil for frying the dough
1 cup (190 g) brown Lentils (or green lentils)
6 cups (around 1 1/2 liters) water
1/3 cup (80 ml) extra virgin olive oil
1 1/2 cups (200 g) chopped onions
2 cloves minced garlic + 1/4 tsp salt
1/2 tsp salt
1/2 tsp ground cumin
1/8 tsp black pepper
🌹Instructions🌹
1. Prepare the dough: in a medium bowl, sift the flour. Add the yeast, sugar, and salt. Wisk to combine.
2. In a measuring cup, place 2 tbsp oil, then add enough warm water to make 3/4 cup total liquid. Add to the dry ingredients and mix with a rubber spatula to combine.
3. Knead the dough by hands for 5 minutes. Divide the dough into 4 equal parts and place on a tray lined with parchment paper. Cover with piece of plastic then with kitchen towel. Let rise for 1 hour.
4. On a wooden cutting board, place 1 tbsp of flour and also place 1 tbsp flour in a medium bowl. Start rolling the dough into a rectangle shape (25 by 15 cm). Cut vertically in the center of the dough, then cut each half in 2 equal parts. Cut horizontal into 1 cm wide pieces. Place into the medium bowl and mix well with the flour so the dough pieces won't stick together.
5. Fry the dough in the hot oil stirring continuously for 3 minutes. Remove to a plate lined with a paper towel. Set aside.
6. I a medium pot on a high heat place water and washed lentils. Cover and bring to a boil. Cook on low heat for 25 minutes.
7. After 15 minutes of cooking the lentils start sautéing the onions. In a medium pan on medium-high sauté onions with olive oil stirring occasionally until golden. Add minced garlic and stir for 1 minute.
8. Add the onions, fried dough, salt, cumin, and black pepper to the fully cooked lentils. Stir to combine and let cook on low heat for 15 minutes or until thickens. Remove from heat and let the pot cover for 10 minutes. Serve hot immediately.
