5 lbs flour
3 cups sugar
10 eggs
½ cup butter room temperature
2 tbsp salt
3 tbsp yeast
4 cups warm milk
1 cup warmer water
In a small bowl put, yeast 1 tbsp sugar, 2 tbsp flour and water. Mix well and put aside. In a large bowl place flour and salt. In a mixer place butter, sugar and eggs beating well until fluffy. Add egg mixture and yeast mixture to the flour making sure it's well mixed. Cover, let rise for 15 minutes, after giving a few folds to start pulling the gluten to stretch the dough. Cover again and let the dough rest to rise or until doubled in size. Warm up the electrical grill and set at 300 degrees. Pull small pieces of dough shaping into tennis ball size and place aside to rest. Shape all the dough once done then start cooking the first one that was shaped. The balls will flattened on their own once they are flipped. Cook for 5 minutes per side on until golden brown and they feel firm to touch.
