For the shots where you see him on screen fully with 2 or more characters, the trick is to lock off the camera and film it firstly with no one on screen as a background plate. Then each bit separately, maybe with a stand in to react to and then composite them all by masking out the rest of the image around each character. The over the shoulder shots are likely using stand in actors. If you ever see an image like this but the camera is moving, then they used a motion control rig which uses a computer to precisely control the image with each pass and the compositing process is the same although probably involves a bit more rotoscoping.
