You may need to "burp" your clabbering milk once or twice a day as the fermentation matures! I like to put the cap on loosely so it burps all by itself. :)

I use raw cream that has gone a little sour in making chocolate ganache. The slight tartness adds a nice dimension to the ganache.

"Fermented milk" is my favorite Ferment so far I think. Clabber with honey is so good! Very good to know it can be made into cottage cheese as well.

My mom used to make a bread with her old milk. She would let go bad in the fridge I mean and then we would make this bread that it was so good. She would call it crazy bread, but as soon as it came out of the oven, we would put butter on it and we would just eat it up. It was really good. I’m gonna probably have to make some for us. Soon

Now I need a cow! I love cottage cheese. We have goats but I either need to start over with bottle-fed goats cause mine are too wild. It's been about 8 mos. and one is starting to "tolerate" me and make eye contact, but trimming hooves is a nightmare. I cant imagine breeding and milking with these two. The whither was bottle-fed and seeks me out for some loving. There is such a difference.
