Great video. I think you should invest in a rubber spatula. It would make scraping the bowl easier and to make sure you get all of the batter into the pan.

I absolutely LOVE your channel❤️ I have always had a love for everything vintage. So much so I have a HUGE collection of dishes, China, serving ware, trinkets, SHOES and loads of PURSES!!🤣🤣. I found it all again when we just moved and it’s too much. I appreciate how much true vintage housewares and clothing you have!!😍. Call me old fashioned BUT…. I love that era (WWII) and the next few decades. It may be because my Father was born in 1941 and my Mother in 1944. So, the chocolate seized up because you added water to it. Water makes chocolate seize, any fat (butter, coconut oil, veg oil) will keep the sheen to the chocolate and prevent it from crystalizing. At least that's been my experience.

I was thinking the same. That adding water makes chocolate seize and that it should have been a fat (butter, oil, etc).. Also breaking up the chocolate pieces would have let it melt more evenly.

Didn't need to add anything to the chocolate. It will melt all by itself. To get a sheen add a little coconut oil. Leave no flavor and makes the chocolate shiny and smooth.

Hello Sage! First off, I so enjoy your video's and how you try to make them as accurate as possible You seem to be such a sweet, young lady, I wish i could get my daughter to watch and learn from you! One, small tip honey.... When you are baking? Use actual measuring spoons and cups...If you follow any recipe exactly, there's no way you, or anyone else, can mess it up, and before you know it, you'll be creating your own recipes and baking will become one of your strong suits just like your home-cooked meals, which not only look delicious, but, in fact, ARE delicious! Keep up the good work Sage, your vids are awesome!.

You’ve got such a wonderful positive and joy filled outlook. It’s refreshing. And from one baker to another, you can freeze cake. Cut it into serving sized pieces and then wrap up and freeze. And enjoy when you’re in the mood. 😉

Your cake looked lovely, and I love how when things don't go perfectly, you just go with it. A little advice. As others have said, water will make chocolate seize. The butter and sugar did look like it needed a bit more beating. Finally, folding is better done with a metal spoon. Wooden spoons have a blunt edge, and that will knock out more air than a metal spoon, which has a thinner, sharper edge. The cake did look delicious though. Since you're doing the 1940s, I'm intrigued to see if you do any war time recipes, or stick with post war. When I saw 1940s, I wondered if you'll be doing a Woolton Pie. I just found your channel through a recommendation from KZbin and love it! I like that you are a real person that sews and cooks and does hair videos and makes mistakes, just like the rest of us. As I was watching this video I knew the chocolate problem may happen because it happens to me almost every time I melt it, even if I follow the recipe to a tee. Chocolate is so tricky. It looked yummy! I think cakes were made a bit smaller at that time post war. Cakes have always varied in size: 4, 6 , and up. I have seen recipes from 1900s cakes 24 inches across. The Victorians liked their cake. It was a way to show off. Enjoy your videos so very much. Thank you

You can just put the serving plate on top of the bunt pan and then flip them over together. if you greased the pan it will come right out and you don't have to worry about it flying off your cooling rack. :)

This is so cool I am literally obsessed with old recipes and baking. I own a 100 year-old baking booklet and have to say the recipes (tho none of them come with temperature and all) are so sooo good.. The cake you made looks delicious!

Sage you are such a sweetheart 🥰 I'm sure others have mentioned not to add water to chocolate. 🍫 I will say the same goes if you are making caramel 🍮 Fat and oil never mix and will separate. And final tip if cooking with milk products heat the fattiest dairy as in whipping cream or butter then at the end add in the least fatty such as milk or sour cream. That prevents the dairy from breaking down and separating. You are adorable. My daughters and I enjoy your channel so much!

I really enjoy your vids so much. It makes me sad however to see how the methods of baking are no longer passed down from generation to generation. Like others have stated, to get a lighter cake “cream” your sugar and butter much longer until it goes a light yellow. Then add you eggs one by one and give them a good mix. My mom taught me how to do this and she was a real 40’s and 50’s housewife. I was her last child born in her 40’s, kind of unheard of in those days, and benefited by her old fashioned ways! Lucky! Also, I would have beat my egg whites a little longer (in a bigger bowl) and the advice about never putting water in chocolate is right on. Wish I could be there to pass on my knowledge to you. I literally laughed out loud at the bloopers at the end.... very funny 😂 The cake looked amazing and it is great that you leave any mishaps in the video........ it's real life Sage and it is great that you don't try and hide what went wrong. No doubt 100 other people have already mentioned about melting chocolate but just in case.............. no need to add water, have your heat on low, break it into small pieces (no need to go to the trouble of grating it) enough water in the bottom pan so that it doesn't touch the base of the top pan. Patience is a virtue when melting chocolate haha Really looking forward to the next episode ! x

Love your videos! Next time you run into a situation where a dish has more liquid than you want, you might try mixing in a cornstarch slurry. To do so, put a couple of tablespoons of cornstarch into a glass bowl, add a couple of teaspoons of water, then mix together with either a small whisk or a fork. Once it's basically the consistency of pancake batter, stir it into the pot. This should thicken your dish. 👩🍳 🌼

I use my grandmothers Good Housekeeping recipe books all the time and love them.
