About Master Sushi Chef Hiroyuki Terada:
Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on KZbin.
At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Terada earned the title Master Sushi Chef by becoming the standing head sushi chef & can serve Fugu (Japan Licensed) to the public.

Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Thank you, Master Chef Terad! Even being a young sheet metal worker, I've always took much pride in my culinary skills. I have been watching your impeccable practice for some time and finally I worked up the courage to comment. Your videos have always been a boon in my daily life and I'm very thankful for your educational and humble lessons. I can genuinely say I'm glad I have had the opportunity to be a spectator of your expertise and allow myself to amaze me and also my family and friends. Yours truly, a viewer, a fan and also a student. Cheers my friend! All the best. Also, I can't forget about the man behind the camera. Your natural rapport with Master chef Terada creates a comfortable and informative experience. You've done an excellent job curating all of this. So thank you as well! And just because I'm curious, why corn oil for frying? Wouldn't coconut oil be a little less intrusive of the fatty sections of the salmon? I don't know by experience just curious to here your two cents!

See, it's even the simple dishes like this that make me really wish you guys were down here in Texas so I could try to win the tasting, or even wish that Hiro was still at the restaurant that he was so I could go buy some of his food. He literally makes everything look so good. I've never heard of salmon belly before but this looks amazing

I remember when I worked at whole foods the skin and salmon belly was always attached to our fillets, and customers would freak out about it. They for sure, were missing the best part of the fish; flavorful and full of healthy omegas

This salmon looks beautiful, Chef Hiro. Done to perfection. I'm also going to Heritage Days, in Edmonton, this long weekend. I am going to see food, arts, crafts, music and dancing from different countries, from around the world. Japan is one of the countries partaking in this annual festival. They will have Japanese food and Japanese drumming there. I hope you and your cameraman have a good afternoon.

Salmon belly tastes delicious, which is not as fatty as pork belly. I was unable to find salmon bellies at Costco, which is one of the stores my mom usually shop at for groceries.

The salmon used for sashimi is so fatty, belly even more so. Hard to overcook. So tasty. I like to smoke it at low temp cold smoke until it pulls apart . So good with spicy teriyaki marinade.

Hiro, Do you need to soak the skewers in water before use. To keep from burning. Or is that an option. What other fish could you use if salmon not available.

Salmon belly costs like half of what the fillets are. Hopefully it doesn't end up like the skirt steak (used to be like $1/lb) that costs more than the porterhouse steak now.

What teriyaki sauce are you using - one of your homemade sauces (like the ginger sauce, which is delicious!) I also think that it would taste even better if you grilled the skewered fish over a flame (like that little hibachi you have) or a regular barbecue grill.

Teriyaki sauce is supposed to add a seared flavor. If you used the ginger sauce, it would caramelized beautifully!
