INGREDIENTS:
Saffron rice ingredients:
* 2 cups basmati rice washed till water is no longer cloudy
* Water to cook rice with must be 1/2” above washed rice.
* Tbsp grated onion
* 1 tbsp unsalted butter
* 1/2 tsp bouillon
* Salt to taste
* Pinch of saffron. (Substitute with turmeric)
Blackened salmon bites ingredients:
* 1 & 1/2 lbs salmon fillet, without skin, and cut into bite size cubes.
* Season salmon with 1/4 tsp each of crushed black pepper, salt to taste, chili powder, smoked paprika, curry powder, lemon pepper, bouillon, white pepper, onion powder, garlic powder.
* A splash of oil on salmon to coat each salmon bite with blackening mix.
* A splash of oil in a tablespoon of butter to cook the salmon with. Cook salmon in a nonstick skillet on medium heat. Sear 1 min on each side.
Mango salad/salsa ingredients:
* 2 ripened and firm mangos, remove fruit in cubes from skin
* Add 1/4 cup chopped red onion. 2 jalapeños chopped without seeds, 1 chopped tomato, 1 Fresno chili, few leaves of cilantro and flat leaf parsley chopped, juice of a lime, salt and pepper to taste.
Buttery Black beans:
* Three 15.5 oz cans of cooked black beans drained and rinsed.
* 1 & 1/2 tbsp unsalted butter,
* 2 tbsp of chopped onion, 1 tbsp chopped jalapeño without seeds
* Season with salt and pinch of crushed black pepper
* 1 clove of garlic minced or crushed
* Mash 1/2 of beans while it cooks on low heat, and add 1 cup of water to thin up creaminess.
