Here are the ingredients used:
14 3/4 ounce can Pink Salmon, drained with bones
and skin removed, or leave them in if you prefer
1 cup fresh bread crumbs
2.25 ounce can sliced black olives, drained
or you can use a small jar of pimentos, drained
1 small onion, shredded (2-3 tablespoons)
1 cup shredded cheddar cheese
2 tablespoons dried parsley flakes
Salt and pepper to taste
Juice of one lime or juice of 1/2 lemon (gives fish fresh taste)
2 eggs
One 5 ounce can of evaporated milk
Bake in preheat 350 degree oven for about one hour
Cream dill sauce:
1 tablespoon butter
1 tablespoon all-purpose flour
A little less than one cup of milk
1-3 teaspoons dried dill weed
Salt to taste
This meal was served with baked sweet potato and Italian beans.

Boy this takes me back to my grandmothers cooking! Canned evaporated milk and canned salmon! I have not purchased these items in over 50 years! I am sure it would be fine with left overs from a whole salmon and cream. Great to watch you cook! Love and respect

Watching the casserole preparation, I could not believe Phyllis didn't add her favorite herb dill! I think I even said out loud... Phyllis...where's the dill!! But she came through with the dill in the white sauce!! Aah, I can rest easy now!!

Pin/pen, there/their, ... I absolutely know what your saying... :-) This casserole looks and sounds delishhh.... It's 28 degrees and cold and dreary here in KC too... I'm having baked chicken drumsticks and sweet potato and broccoli rice casserole for my dinner... it's just me and my 2 cat children... it's hard some nights to eat right when it's just for one... but at 62, I'm trying hard...lol! Phyllis you just be yourself. I love the way you talk! I enjoy the differences between how people say things. It still means the same thing. We understand enough of what you're saying that we could do the recipe because you're not speaking in Italian or some other language we don't know. It's hard to recipes if they're in a different language completely and you don't know how to understand it. My husband speaks 4 languages and so when he starts off in his native tongue I just go do something else. I don't understand what he's talking about. So you just be you! You are the one that makes us enjoy your videos because of just how you are. Mr. Boogie and the puppies are pretty special to us because you share them with us. That shows you are a loving and caring as well as excellently wonderful woman in my eyes. Your recipes are always delicious and so that should count for something!

Miss Phyllis I just made this tonight. It was exactly like my mother's salmon casserole except for the addition of the black olives which made it even more tasty. Never made the dill sauce before. It was a pleasant surprise and delicious!

Hey Phyllis!!! Love you!!! My mom used to make salmon cakes with the canned salmon (little bones and all) and I used to eat them like a little trooper when I was young. They sure did make the house stink!!!! Now to think of it, the thought makes me gag!!! I do love fresh salmon and the kind you used seemed to be chunked and de-boned. I think I would like that a lot, although instead of the hassle of cream sauce, I’d likely just put more lemon juice or vinegar or something on top and use cocktail sauce with extra horseradish. I have been watching your videos so long... I love your southern accent and the way you say “sal-mon”, and “sredded” (not SHredded), and other things. I find your voice and videos relaxing, nostalgic, and helpful!!!!! Please keep doing what you do. It’s a cold dreary Monday evening here in West Virginia too!!! 💜 Heidi

This reminds me of the recipe that my grandmother and mother made with the dill sauce. It’s a little bit different however I don’t think they ever added olives but now I am going to go back to my mom and get this recipe from her so I can make it. In honor of you Miss Phyllis and my grandmother and great grandmother. I sure do miss you and I miss your new videos. I know you and Mr. Bucky are up in heaven together. But we sure do miss you down here.

I made this for dinner tonight and it was delicious. I used pimentos and lemon juice. The lemon juice really made it taste like fresh salmon. Thanks Phyllis and go ahead and pronounce it any way you want. They wouldn't have put that "L" in there if you weren't supposed to use. it!

The absolute best canned salmon is sold at Trader Joes. It has no bones and no skin. I love your recipe idea for a change of pace. I usually make salmon cakes with Old Bay Seasoning, sautéed minced onions and sweet red pepper. They are very good but I will try your recipe which looks great with the cheddar cheese. Thank you!

I'm of Italian and Portuguese descent. In Portuguese, you actually pronounce Salmon with the "l" the way you do. In Italian, my family pronounces it with an "a" at the end, like Salmonay and also they pronouce the l as well - which I think means big Salmon in broken English/Italian. Anyway, say it however you like, you are charming, fun, kind and sweet and have an amazing repertoire of cooking. I really enjoy and look forward to your videos. Thank you.

I made the casserole this evening and it was great . Far superior to the salmon loaf recipe we had been using for years. I put both the black olives and the pimento in it. I figured in for a penny in for a pound, LOL. I admit I was doubtful about the olives and salmon combo but I was really surprised how well they went together. I didn't have any extra bread to make fresh bread crumbs with, so had to go with the store bought ones I had in the fridge. I had to reduce the amount because of their density and add a little extra moisture because they were dryer than fresh made would be. In the end it turned out fine though. Good evening Miss Phyllis. I love your southern accent..My Grandparents were from Ky (Ohio now) and i love southern accents and southern food..lol...I picked up a few words from them..My stepson laughs when i say warsh instead of wash lol and a few other words...I love your videos you do a great job on them..I made your Cheese Cake for Thanksgiving this year...I bought a 9" spring form pan , never used one before..It turned out very good..Everyone loved it...So thank you for all your videos..I appreciate all your hard work..

Hello... I like very much the way you do this dish of "saLmon" in my family we are french speaking but when we want to speak in english about that fish, we always say "saLmon" the same with many of my english speaking friends .... but some say "samon" who are from UK background.... anyway it's the same fish so who cares :-) I like the way you do this casserole, because it's almost the same "saLmon" mixture that we use here for what we call "pâté au saumon" or "saLmon pie" ... except here it's cooked in a pie crust and we dont mix the fish with bread crums but with mashed potatos... Your way is much lighter, just this filling cooked by itself no pie crust, in a casserole..... I will try your way this WE... Thanks... Kind regards from Montreal .... (I hope that my english writing is not to hard for you to read) :-)

Daniel, that sounds delicious in a pie crust. I will have to try that method also. I'm in Kentucky and make salmon patties using mash potatoes, beaten egg and dried parsley and dill, salt and pepper. Form into patties and flour then place in oiled skillet and fry till crispy on outside.

Like you I could not stand salmon patties growing up in the 1950's. My mother made them at least every other Friday and we weren't even Catholic. We always ate what was put before us and were never allowed to complain about the food, my daddy made sure of this.

I love the way you cook! When you wiped out the inside of the grater to get the last of the cheese it made me think of my Mom - and myself now - not being wasteful as so many people are today. I love to cook with my granddaughter - we made you angel biscuits for thanksgiving - hoping to pass on the way our Mothers and Grandmothers cooked to the next generation. One suggestion for juicing citrus - especially limes which can be dry - microwave for 15 sec. and use a fork to squeeze it on. It will get you about 50% more juice! Thank you for all you great videos!

I am from upstate SC and know the "l" is supposed to be silent in the word salmon, however, I don't think I have ever heard anyone pronounce it without the "l" sound. I guess it is just a southern thing. Miss Phyllis, please don't do anything to lose your southern charm. We love you just the way you are.

Hi Ms Phyllis! Makes no difference how you pronounce "salmon". All of my crew enjoy salmon croquettes so I think they would enjoy this casserole as well. The recipe reminds me of salmon croquettes kicked up a notch! I'm adding the ingredients to my grocery list so will try this tomorrow night for sure. Lots of memories are made around food & cooking. Many years back, my late husband happened to come into the room when I was watching Jacques Pepin on TV and he heard the great chef say salmon with the L. Thereafter, my husband always pronounced the "L" and we would have a little laugh about sounding so French. Then, to be funny, he started pronouncing the K in knife - - "ka-nife" and we'd have another little laugh. You are in good company with Jacques. :-)

Okay - I laughed at this one so hard I had tears in my eyes and my nose started running. When I read it to Mr. Bucky he had the same reaction and we both started laughing. I'm going to remember this one for a long time. It reminded me of the episode of "Golden Girls" where the funeral directors name was Pfeiffer and he said it was pronounced Pa-fiffer so Dorothy pronounced it PA-Fiffer.

I always say sal-mon.......anybody that doesnt makes me wonder why they cant see the L...lol.....but I think what Phyllis calls white sauce is what I call white gravy. And thats no problem at all as long as I cook it right/understand what it is cause I definitly want to cook it right! Phyllis has the best recipes on youtube! They are amazing

Good evening Miss Phyllis! You're casserole looks divine. I'll be trying it very soon. I love salmon patties, salmon stew, and my favorite creamed salmon over egg noodles. My mother cooked with it quite a bit, as it was relatively cheap and she had a family of 6 to feed. To me it's comfort food. I always keep a few cans on hand for quick meals. We're bracing for our first batch of winter weather here in the piedmont of NC starting this weekend. The meteorologists say we might get a doozie, and before Christmas, which hasn't happened in many years. I do love to see it snow, as long as I don't have to drive in it, and we are fortunate that we have most everything we'll need... plenty of bread and a new gallon of milk! LOL! Have a lovely evening Miss Phyllis! Oh and btw, I pronounce the L in salmon too...just the same as my mother and grandmother did. 😊

Phyllis, I've noticed canned Salmon price going up. It seems in our area the sale on canned Salmon isn't as often we it use to be. I'm in Kentucky I do pronounce the "L" in Salmon. I think I do because I think of the letter "L" being there in Salmon. That is how I tend to pronounce words. By what letters are in word. Probably sounds crazy. But I always see spelling of word in my mind first before I pronounce word. But I think it is just fine how you pronounce Salmon. That makes you who you are. I don’t care how it’s pronounced, I just love salmon, yum! This looks really good although I much say I’m intrigued by the black olives in it. Still, I’m going to try it that way. This seems like it would also be tasty served on oven toasted fresh bread (with butter of course) with a generous ladle of that yummy dill sauce. Mmmm, mmmm good!

my sister and i are from asheville nc, and we grew up when asheville was southern, and not the booming crazy city it is now. my sister moved away when she was just out of highschool and moved to california, she lived there for 10 years. she became sophisticated i guess, hahaha cause when she came home to visit, she made fun of how i pronounced the L in salmon, just like you Ms, Phyllis, and she said, "its pronounced saaaamon." anyways. i still say salmon with the L . it truly is a southern thing to say, love you to Ms. Phyllis . and many blessings, michelle

Mrs. Phyllis, I say sal mon too! I'm from N.C. and l say it the way my Mother did! Also, l was in Dollar Tree last week, and they had Tetley tea /12 family size tea bags for 1 dollar. I love Tetley tea, it's my favorite, after using Lipton for so many years l lost my taste for it!

Miss Phyllis I don't think any of your followers would be bad mannered enough to correct you. Different dialect etc can change the way a word is pronounced and I think it's rather sweet the way you pronounce it! Gentle Hugs from UK.

Yummy! I think that I would love the dill sauce on the salmon. I never thought about using lime juice in place of lemon juice. I bet it really perks up the salmon taste.

The lime juice makes the salmon taste like fresh salmon, to me the lemon juice is too strong but the lime juice is just right.

Even though it’s salmon it could be called Red velvet cake and I still would hate it . But I just love watching you . So as long as I don’t have to smell it or eat it . I’m fine watching it . Bless you . Loved Mr Bucky and y’all discussions. 🙋‍♀️

I love that you say, saLmon, Miss Phyllis. This is a simple, homey meal we might have eaten as a family growing up. I liked watching your making the dill white sauce and your freezing a sweet potato. Do you know if regular potatoes freeze very well? Thanks for sharing this neat meal and recipe.

Regular potatoes do no freeze as well as sweet potatoes. Regular cooked potatoes separate some of their liquid when frozen, it does not effect the taste. I have frozen cooked regular potatoes that turned out very well by draining off the liquid that came out of them and then using them for cream potatoes. Cooked red potatoes freeze better than other kinds of white potatoes but still not as good as cooked sweet potatoes.

In New Hampshire, we serve something similar to this. We call it salmon loaf (made in a meatloaf type pan) with white sauce with peas poured over the slices. Delish, especially made with fresh salmon. I have never met anyone who pronounced the L in salmon, but as long as we all understand each other, that's the only thing that matters, lol.

No question about it...I’m making this for sure. Except I’m a weirdo because I love salmon bones. I think they have so many nutrients, especially calcium. You’re a great cook, Phyllis, and your voice is so soothing. You say salmon any way you want. It bugs me how crazy some people are that they can make such stupid comments. Looks great😊 I’ve never had a lot of success cooking with salmon... my last attempt was salmon patties and they were just awful. Not a big fan of it so that didn’t help. This recipe looks good so going to try it as salmon is so good for us and I’d like to include it in our diet.Thanks Phyllis.. always great to see another video from you! 😊💓

I love u saying salmon with an L💗 People in the north often don't know what 'pop' is but we always called it that not 'soda pop' or soda. This casserole looks good, for salmon, especially w ur dill sauce. Dill can do a lot w fish. I'm gonna see if I can find my tuna salad recipe I got...omg it's the best u ever tasted! It's got dill, dill relish, curry powder...you'll love it!💗
