Leeks are very versatile and economical. They have a relatively long shelf life too. I love the mild sweet taste they get after cooking them on a low heat with some butter. And save the tops for stock making!

I disagree with everyone saying salmon would be dry. If the salmon is baked in between the moistness of all the ingredients, it should be moist as well.

Actually, you guys are applying the same logic people use to think that water is a lubricant/a moisturizer: it isn't. In fact, water can "wash out" the moisture. The humidity on meat comes from a mixture of the mioglobin (that red liquid that drips from a medium rare meat? Not blood, it's the mioglobin present on the muscles) with fats and proteins that are liquified under heat. It's not water. To preserve the moisture on cooked meat you can't overcook it, because all the moisture from these fats, mioglobin and proteins is released and the water can't even penetrate that dried out meat, anyway. But the cheese on top of a fish dish made me more angry than the dried meat.

There isn't any conventional recipe for lasagna with fish and I was really wondering about the pasta sheets. Because in general, you need to boil 'em first right?? However, it looks mouth watering delicious +Bart's Fish Tales !!!!

+CrazyDiamond16 Frying pans come in a huge range, what you want is a heavy base so you get even consistent heat transfer and a steel handle and either a steel with no coating such as stainless steel or carbon steel which you dont have to worry about damaging any non stick surface or a top quality non stick coating that is safe and resistant to damage. This is just one example, prices will range wildly so go by your budget and the guide I offer. The recipe looks nice but I agree with the comments that the fish will probably be overcooked with the double back. Also, the cheese looks kinda burnt. It's more black than golden brown. Maybe grate it a little thicker?

+Martin Ahlman This is very similar to a fish pie, but with the addition of lasagna sheets. A lot of fish pies will use haddock, cod, shrimp, scallops, etc :) And instead of pasta, use potato mash. You could definitely make this with other types of fish ^^

Salmon has a lot of fat so you can cook for a long time without drying it out, granted it's been sealed with something else (in this case, bechamel sauce). Salmon will only dry of you leave it in the oven uncovered for too long

+Jian Sern kok It wasn't dry, as said in the comments before, I cooked it in the oven with the wine and herbs to give it flavour, it was not fully cooked then. The second time in the oven did not dry it out either, because it wasn't fully cooked on first hand and it was packed in between the layers of the lasagna.
