Salmorejo is traditional from Cordoba, and it is not a soup as many believe, it’s a dip. You will not believe how these humble, common ingredient, can go that far!

Delicious on a summer evening - done it lots of times now, just drizzle the olive oil in slowly and it works every time 😋 If you're a veggie you can leave the ham out and substitute with toaster nuts, sarazin seeds etc and top with a few leaves of Italian basil

Bardzo lubię pańskie przepisy, często gotuję po hiszpańsku. Paella, omlet z ziemniakami to często gości w mojej kuchni.

Great, refreshing dish for the summer! If your son liked it, then you know it's good; kids don't lie! When it comes to summer dishes, my personal favourite is a good chickpea vinaigrette salad. Do you have a good recipe for that? I use the one in the Thermomix cooking book and I'd like to learn how to make it properly. I asked my grandma for her recipe but her answer was something like "Oh, I take chickpeas and read and green pepper, and this or that, depending on what I have in the fridge, and just mix it together". Without 60+ years of cooking experience, though, those instructions don't result in a good chickpea vinaigrette.

@@thespanishchef I tried it and it came out to fluid an it had to much acid, I added more bread and that solved the viscosity but I think 3 tablespoons of vinegar are too much

Should be fresh. However it can be served at room temperature. Never warm

Salmorejo tiene una identidad propia como plato, La explicación de donde viene deberías informarte mejor porque es errónea ,Es un plato que en Andalucía y parte de España se come todo el año (no solo en verano) Mas que una Sopa es una Crema ,La Receta mas o menos se asemeja a la original , Y el Gazpacho aunque tenga ingredientes parecidos es completamente diferente en textura y sabor .... Un saludo y espero que le sirva mi critica constructiva

Hola Raul, yo feliz de recibir criticas y aprender. Te cuento que mis parrafadas nunca son perfectas ni tampoco las preparo con antelacion, cuento lo que me sale porque en un porcentaje muy alto del recetario español, me lo se de memoria porque llevo cocinando toda la vida. En este caso especifico, describo que es un hibrido entre sopa, plato y algo de untar (cremoso) ademas de veraniego dado que se disfruta frio y la gente que ve este canal en su mayoria son extranjeros o gente que vive fuera, como es mi caso que vivo en Inglaterra y ni se me pasaria por la cabeza tomarme un salmorejo fuera de los 5 meses mas calidos. Desafortunadamente el concepto de crema o pure al que te refieres no tiene traduccion literal, si la hubiera lo habria usado ya que describe mejor lo que es que una sopa, que aqui "sopa" engloba tanto un pure de verduras, un salmorejo o una sopa castellana, las cuales son bastante distintas las unas de las otras. Espero que ahora entiendas por que use las palabras que use en ese momento, pero vamos que no es facil a veces satisfacer o cubrir como minimo lo mas importante de cada receta. Trabajare en ello eso si. Un abrazo
