I’d say that the Italian analogy to salo is not panchetta, but lardo, which, like salo, is also cured fatback, but probably not as well known outside of Italy. I tried salo at a Russian restaurant as a sort of very light hors d’oeuvre prior to the actual courses and I quite enjoyed it. They served a small portion, very thinly sliced and accompanied by pickled red onion and dark rye bread chips (sort of like very thin slices of pumpernickel baked to a crisp). I’ve also had the version with a bit of meat in it (not smoked, though) served on bread with mustard and it was also enjoyable.

Heard about this today and had to try it,found a garlic variation at my local polish shop, salo is basically what i love about pork! It tastes…porky, the part used is the gelatinous fat! And i found one seasoned with garlic? I mean ive found my new favorit thing to have on bread!

This is one of those gems that rewards the foodie who tries a bit of everything. For westerners, it sounds off putting, but once you take a bite you keep coming back for more. Make sure you get it from a good supplier, as really good salo has none of the "greasy" taste that might make you hork. It's almost like a buttery, meaty melon that melts on your tongue.

Brilliant. We struggled with the concept of salo originally but it really grew on me the more I consumed it, along with vodka obviously. Mandy had a hard time with it though. We were really surprised when we got to Romania how much they like it there too. The smoked one looks amazing. Now I'm getting a craving!!

Second generation Ukainian here in the USA. We had all the traditional foods growing up but no salo. My first encounter was with a Russian guy at work who brought the salo, bread and a very spicy Russian mustard. I think he was trying to get a negative reaction out of me but it was great and I went back for more with extra mustard. He said I must still have some of the old country blood in me to eat this because the three others at the table turned their noses up at it. I've been eating it ever since.

I love khrenovuho!!! Especially with salo. And smalitz I’ve seen people eating salo with pickles, onions or dill, but the very best is with fresh, raw garlic slices. And it’s not raw. It’s cured with salt, just like so many other foods we eat.

I'd actually love to try some. I've heard about this from Italian friends of mine - they say lardo is better, Ukrainians who have tried both say that salo is better. So maybe it depends on what passport you have as to which you would prefer more :D I hope to try some someday. Thanks for watching!

I tasted salo while doing a course on a Russian research ship a few years ago, it was the salted variety and I loved it. Yesterday I tried to make Hungarian style salo with a variety of spices and paprika and it tastes great.

Salo is a good survival food. It has a lot calories and fat in a small package, and if it's properly preserved and stored, lasts a long time.

Its pretty much the worst survival food you could come up with. It has a maximum shelf life of 6 months, the fat oxidizes, its nothing but useless empty calories, it'll increase your hunger rather than satisfy it and can make you very sick if thats what you're mainly eating

Lets not forget all the fabulous home made nalivka, YES, I SOUND LIKE A COSMOPOLITAN, but strawberry and mint is fabulous! blackberry is basic, cherry and so forth, there is a 20 episodes series there waiting to happen..... you could make a series of making samagon? like, actual quality booze? do you remember the moldovian apricot jams? i do. dried sticky bananas that tasted more banana then i have ever managed to get any banana taste like? cosmonaut jams? tarhun? i remember one time we got some lemonade with our brothers and one of the lemonades was not lemonade, but something sweet and very alcoholic. my older brother, who was at the time about 8? got shitfaced fgrom that instantly. family consensus was that somebody who was working on the line pourted his/her vodka into the line not to get caught.

As an Australian currently living in Russia I can say that Russian Salo, albeit different, is delicious. It took a little convincing to get me to order it but after the first time, it is a staple at any bar with flavoured/ unflavored vodka. DELICIOUS. I just hope I can find it when I finally go back home.

The shirt is called a Vyshyvanka, its traditional Ukrainian embroidery. I'm sure you could google around and find something. Just make sure you can see it before you buy it or trust the buyer, a lot of them are just chinese machine made and its better to get a homemade one. Thanks for the support!

Rye bread is the only bread, as it is called leib, meaning bread, this is what feeds you on the fields and gives you strength to live another day and the white stuff is called sai, this is for pansies and lords. western eu and us considers that as bread, but lets be honest, its about as "bread" as jack daniels is a smokey single malt.
