Golden candle co-op is infinitely more fun cause you have a higher chance of getting invaded in my experience. Plus good rewards from the sunbro chick

Just to know, you won't get invaded if you don't use the candle? Because in dark souls you get invaded just for being online

You are correct. Invading works like this: if you summon cooperative people, you're also opening yourself to be invaded. If you light a red candle, you are directly inviting a invader. If you play solo, you will stay solo. If I just want help with a boss, I get right close to the boss screen and then summon my help. Once you start a boss arena, any Invaders leave because they cannot interfere. If you're chasing the mage, anything goes.
