If it's salted for preservation, and you dilute it to remove the salt, why not use fresh cod instead, or does salted cod taste better than fresh cod?

Salted Cod taste better than fresh Cod. Salted Cod has flavor fresh Cod doesn’t have, it’s not just the salt.

The taste of the cod is more concentrated when the water is taken out. I prefer the salted cod in fritters or fried with eggs and onions and peppers. But just last night I coated some fresh cod in seasoned flour and fried in olive oil.
