A pre-smash burger cooked in tallow instead of ghee. Pre-smashing the cheese is new though and clever. Looks really good and makes me want one.

Holy Crap!!!!! Just did this cook. Used ground Waygu (sams club) and a rolling pin/parchment paper since I don’t have a tortilla press! This was so simple and turned out so darn good!!!! Wife said it’s the best cheeseburger she’s ever had.... I said it was the best cheeseburger I recall cooking (just because this could be an “in the moment” feeling of success.). Seriously you must try this. Tip: don’t skimp on the sauce. I initially went more conservative since the video seemed overkill on the sauce, but found myself literally dipping the burger in the sauce bowl during consumption”

I don't have a tortilla press but a good 12 or 10 inch fry pan will do the job. I'm also a fan of thin patties instead of a thicker patty, will have to try the fresh dill.

Awesome looking burger! Pressing the cheese makes it round which is really nice. (Sometimes I'll break the corners of a square cheese slice to fit the round burger.) We'll have to give it try!

Take Steak recipes and turn them into burgers. You did it with Wellington. Now Steak Diane. Poivre. Stroganoff. Hollandaise/green pepper. Caffè de Paris butter. Brazilian garlic sauce Steak. Florentine. So on and so on. All these work great. I've tried some. Love to see your versions. Keep it up. Love both your channels.

You can take 2 pieces of wax paper, and use a heavy glass pie pan to smash with. Your fingers act as spacers to get the thickness even. Rotate the burger patty and press to ensure even thickness.
A technique to make masa or in your case meat come out even is to rotate the material in the tortilla press after a first weak press. I noticed the first burger pushed out the end. The second one looked great. Nice project. Thanks.

Last year I told my GF I wanted to buy a Tortilla press "really? SOMETHING ELSE for the kitchen that only does 1 thing...." So I decided against it. But thanks to Greg I now have a 2nd thing to tell her I'll use the Tortilla press for, no more single use lol.

I just did a bison/wagyu blend onion smash burger w/ American cheese, Clausen dill pickle, more onion on a grilled potato roll ... mouth watering good !!! Keep up the great content!

Thanks for sharing. I was just saying to my DH that we should try our tortilla press to flatten the burgers. Never thought of the cheese which we made too big as the burgers shrink and cheese overflowed. I'll know better next batch.

See if you use actual rendered beef dripping (tallow) as opposed to processed tallow the results are incredible.

Here's an idea for you, ground pork patty, Monterey jack cheese, canadian bacon, sauce(2 tablespoons mayo, 2 teaspoons ketchup, 2 teaspoons spicy mustard, [I like apple smoked bacon spicy mustard], 1 diced dill pickle), bun. Simple and delicious.

Feel free to add whatever else you like, I wanted to add caramelized onions after the cheese but didn't have any onion in my fridge. I also added spinach(fresh) and 2 slices of tomato to mine. I left those out above because, really, they weren't needed.

Ya I subscribed a couple months ago and I am enjoying going back into the back catalog of videos. Now I am not normally into smash burgers but I really like that technique and I could see myself doing that. Now I am also not a huge fan of pickles sometimes but I really like the fresh herbs Dill especially baby Dill. Now I think that that would be interesting 🤔 with say maybe some Hot Bread and Butter pickles. By the way If you like pickles hotter just take store bought and add your favorite peppers and herbs and spices after you open them. I like to open up a jar and immediately add 1 or 2 habaneros and a whole clove of garlic and perhaps some other secret Ingredients...

I use a tortilla press for my burgers too...best way to do a smash burger I have found while using a frying pan and electric stove. PS: you're doing the tasting part all wrong but, being the humanitarian and supporter I am, I am willing to be your taste tester for free) :p

4 ounces each. Don't go off of time, go off of the way they look. When you see holes forming with steam and juice emerging, flip.

Have you done the Burger King double stacker? It's not on the menu currently, but has had a couple good runs in the past. I always considered it the perfect burger. Everything you want and nothing you don't. Edit: they had a single and a triple as well, but the double was the proper meat to bun ratio.
