I have boiled hamburgers in a microwave. I smash them thinner in the middle because they swell in the center. Leaner healthier burger because fat floats to the top of water.

I think the dimple in the gadget is useless. The dimple needs to be thumb size, reducing the thickness of the patty by a third in the centre. Placing a press on the burger initially is easier. The recipe looked fantastic.

Great looking burger! Can you try and make a copycat of the Black Truffle Burger from Shake Shack next? I’ve had this burger recently and it was fantastic!

I wouldn't be surprised if the dimple helps with preventing frozen burgers from balling up while cooking. I think it was one of your videos that said to score them a bit that has always worked for me. But the dimple could work similarly. EDIT: Also guess it didn't help XD -- although, you didn't freeze them /shrug

I get tons of requests and can't follow up on them immediately. January became a very busy month for me due to family things and a lot of other things that took priority in my life, which is why I also took a break from shooting videos. I love the idea of doing a top 10 burger video and I will get to it.

Good video Mike. That contraption, not so much. The ingredients, great choices. We eat a lot of chili crisp around here but never heard of the Mexican style. This burger I will try. Cheers

Maybe a leaner grade of beef would have less shrinkage? Maybe 90/10 or 93/7 would hold the shape better?

My wife is Chinese. I did the legal immigration to get her here. Her and her daughter. From Shenyang China. We make our own chili oil and crisp. Which is chili oil and you removed the oil. Chinese chili oil and crisp both have peanuts in it. What's crazy is, soooo many Americans have peanut allergies. But in China, that's not an issue. Why is that?

There actually is a weird phenomenon that happened. Don’t quote me on this but apparently there was some article or study in the 80s or 90s that led people to believe that pregnant women shouldn’t eat peanuts or peanut products. Doctors were telling women like they would for raw fish or wine. Apparently that led to a massive surge of peanut allergies.

A peanut allergy is an immune response. It can be life threatening. Our immune system is bombarded by the poisons we put in our bodies from all the processed GMO, unnatural foods we eat. Likely the reason why it was not a big issue years ago because we ate more natural home grown foods.

Greg, here is what draws me to your productions. You invest in the experience of making a great burger. You’ve shown me tools and stuff, including the hexagon Tupperware container that you and I both know is superfluous. You are the only person to carefully craft your patties and are careful to state “do not overwork your meat”! You introduce interesting products like (I’m in Texas) the difference between Asian chili crisp and Mexican chili crisp! You research, you travel, you make your wife a burger! You explain what you are doing and why! That is a great help. I can’t stand onions and they can’t stand me, but I can edit the goofy parts out and create something that may come close to what you are able to make. The point is you are there, you are interested. Not many people care about the origin of a bun, or the melting point of a particular cheese. You are, and I thank you for it! Bob in Texas.

the original chili crisp sauce is from Laoganma, thats the one i like the most. the guy bringing the lawsuits is david chang, im a fan of his cooking also. really delicious on almost everything. try the original.

Thank you! Yes, I like David's cooking but I think it's pretty weak that he is bringing on lawsuits for using a term that he didn't create. Like the way Umami Burger was suing over restaurants using the word, "Umami." Cheers!

Kinda' like when you're cooking breakfast sausage (not links). The spices will start looking toasted and the meat will become a bit more firm in texture.

A fantastic burger Greg! Chorizo and onions together are super delicious, Kewpie mayo adds a unique flavor. The chili crisp sounds amazing and all together its a complex, flavorful burger. A fabulous idea!

I think the hexagon is designed to allow the side to expand making it round. It is probably good for people who have good luck making patties with their hands. I do have a hard time with it.
