I was a KFC franchisee for 30 years. Thanks for giving proper respect to the bucket and to the worlds best chicken, original recipe. But I’ll say, your chicken looks delicious.

Can you use a regular old fashioned pressure cooker or newer instapot pressure cooker ? Sounds the same yes?

@@thai6687 I don’t know if the Insta pots are made for fry cooking. I would be cautious to try it unless the instruction said for sure. Pressure cooking with oil is nothing to not be reckless with.

In the flour mixture, I also add cornstarch. It makes for a light and fluffy coating.

I found the KFC 11 online. One of the ingredients is celery salt. I used celery seed, just a little, and it actually makes a big and delicious difference.

I worked at a KFC as my first job. Brined and tenderized in a tumbler. Tumbled for 20 mins, marinating for 24 hrs. It’s pressure cooked in a fryer. Rinse in water before breading, bread once for regular or repeat for extra crispy. No dairy, no buttermilk. No eggs.

@@nickygepetto6684 Privet Nicky, it looks impressive, but seriously I DOUBT our fav Colonel Sanders had (the time he lived) all the methodology of chemical extraction, products such as "dried egg whites" (developed decades later), Sodium Acid Pyrophosphate, Extractives of Annatto, Monocalcium Phosphate (actually a component of *fertilizers* ), I doubt those years were "Onion and Garlic POWDER", Monosodium Glutamate, etc. It is advertised that he used 11 "Herbs & Spices", not dextrose! Perhaps NOW I understand why KFC just does not taste the same as few decades ago! Many of my comrades and I noticed a definite difference in taste at some point. Have any of you in the West seen HOW those poor Baby Chicks are treated, injected with growth hormones to increase and misform their bodies so badly that they can hardly walk!? They live just a few weeks before being culled for Billions of lovers Chicken flesh myself included! How sick humans are, being at the top of the food chain. This looks pretty good, personally I always add some corn starch to the flour and let the flour set up on the chicken for 20 minutes before dipping in the buttermilk that way it stays stuck to the chicken better when it goes into the frier. I also do 2 runs through the coating process to build up a really nice thick coating. 😋

I know, I said where's the corn starch? Add a little baking powder too. Then you get the KFC Popeye's Church's crust. Double run as Paul says for extra thick & crispy.

Natural chicken is best. No need for all the flour/corn starch/baking powder/ double dip crap... Learn to cook proper and no need for all this egg-wash/double dredge in double seasoned flour with 9 spices Bullshit.

Dude, the culinary teacher at this high school nearby told me that the secret to keep the batter from falling off the meat is to coat it with flour and let it set for about a half hour before dipping in batter.

Great looking chicken! I have to say though I worked at KFC as a teenager in the 1990s, and it is not just the special recipe that makes KFC's chicken so good, but the pressure cooker fryers that do their magic. I have tried for three decades to mimic KFC's pressure cooking fryers using the same method you did and it is impossible. It really does make the perfect chicken every time.

Very well done, Sam! Fun fact...Back in the early '80's, before the great healthy eating kick, I worked at KFC in a small town in Ontario, Canada. We used Tenderflake lard in the cookers, not vegetable oil... The chicken was much better and more flavourable than today's offerings. Take care and all the very best to you and your family.

@@dianeexley1709 hawaiian rolls... it doesn't taste the same at all but it's still greasy good.. best thing they came up with since the old days was those big potato wedges in the 80s & 90s.. now they just offer some shoestring fries .. but those wedges were a guilty pleasure. Ditto to all praising LARD... healthier than all the veggie substitutes they've used... though i wonder what would happen with coconut oil!

One of the reasons I love the Kentucky Fried Chicken original recipe is specifically because it isn’t crispy. I love the softness of the fried outer skin, and have never been able to duplicate it.

@@MrOldclunker That's what my father used when he decided to make KFC at home. He nailed the spices but I couldn't tell you what he used. It honestly tasted just like KFC's original recipe chicken. I'll have to ask my mom if she has his recipe somewhere.

Water, to rinse... milk powder and egg powder in the flour and spice mix, should be less crispy if u keep it warm in oven at lower temp for a long time, or over held like in kfc lol.. 1 time In flour after being washed. Drumstick gets second run. Is how kfc do in uk.

I always heard the Colonel traveled high and low pushing his chicken because the difference was pressure cooking it before dredging (afd some corn starch for added crisp). I've done this extra step for years, and yes, it is better and fry time cut in half.

Its called Broasting. It holds the moisture in and because the moisture mostly remains in the meat the oil does not replace it. It is just better than deep frying. Believe it or not Albertersons does this with their chicken and it cheep.

As an ex kfc cook. We always folded the wing . Like pulling someones arm behind his back. It makes the smallest piece a bit denser so while the whole batch cooks it wont overcook while the bigger pieces are undone.

Having worked at KFC in my teen years, two points. Part of the prep of KFC is to break the joint in the thigh. A little bend and you feel it pop. We were told it helps it to cook more completely in that area. Other part is the wing fold. This is difficult to explain, but you can see it with a cooked wing. The wing tip, middle wing and upper wing. Fold the tip a little backwards and under the upper wing. Keeps it tidy as shown at 1:30 in Sam's video. Both the breaking of the thigh joint and the wing fold we were expected to be able to do one handed with either hand so we could load the cooking baskets faster. - I am anxious to try Sam's recipe. Looks amazing!

More info. I was taught to pull up the skin on the leg up before placing it in the fryer. And by fryer, I mean pressure cooker. As I remember, the breasts were dropped first along with the keel (yes I'm old), then the thighs, legs, and wings. After proper browning the lid was closed and the timer was set for 13 minutes.

I worked at KFC back in the day. They actually (used to) have three cuts from the breast section. 2 ribs and a breast (the part with the white bone). I don't know what they're doing now, but I think they're cutting the chicken into more parts and giving you less chicken, because you can't make sense of the pieces anymore. I stopped buying chicken there because of that. It's nothing but corporate greed.

Yes, we just ordered a bucket from there after years of eating popeyes and were very disappointed. Some pieces were unrecognizable & we did not even get any breasts. It also did not taste the same as I remember from 5-10 years ago. (Original recipe) I'll stick w/Popeyes or make our own.

cooking chicken on the bone adds so much flavor. and the bits of the liquid wash that end up in the flour dredge create those little lumps that cling to the chicken and make the extra crispy. So good. Thanks for the video!

Makes me miss my mom she passed Dec '19 terminal cancer. When I was a preteen she worked at KFC and had bags of the "secret recipe" mixture. Would cut up whole chickens and would ALWAYS do me the livers too. She went on to work for Tysons chicken for 30+ years.

@Eglyntine Price Yep, you cut through the skin between the thigh and the body with the chicken on it's back, pop the joint, and then flip her over so that you can guide your knife below the oysters on the backbone, through the joint and carefully out the other side so that you get "mouse ears."

Love the season flour. So many home cooks don't know what to use. You have introduced a great way to make good homemade, well seasoned fried chicken for less than $10 oil and all. I like to put my grocery store chicken in salted water for 20 - 40 minutes for the moisture retention. Unless you spend a little more for organic. They do taste better (you are what you eat goes for chickens too) but are more expensive. You could be paying $10 - 15 bucks for the bird.

I add cornstarch to the dry and yellow mustard to the wet. Guarantees crispy and no bald spots! Plus I cover the chicken in salt 24 hrs ahead of time. You will be amazed at the difference in taste and juiciness.

I've tried the original KFC recipe technique and it was almost perfect except I didn't use enough of the 11 herbs and spices to match the original. But here's the 11 herbs and spices. Ground thyme , dry mustard , dry basil , smoked paprika , white pepper , ground ginger , celery salt, regular salt , oregano and finally black pepper. I hear adding a little msg in the mix is good as well. Hopefully you can try this concoction and find the right ratio of spice needed to make it right. Mine was like I said almost right on track.

I found a way to make my fried chicken extra juicy. I marinate it overnight in sour milk. I had milk that had gone bad and was looking for ways to use it and the result was the juiciest chicken I ever ate!

Sam, I love your channel. Try cooking the chicken in a pressure cooker first to cook the meat, and then start the breading process and deep fry. You won't have to deep fry as long. Big difference! Just a friendly suggestion. Keep up the great work, Sam!

KFC used to have a part called the "keel" which was the tip of the breast with the cartilage in the center. Not sure if they still do that in their bucket or not... and they would fold the wings, and they would pop the bone on the thigh I think to help it cook thoroughly.

I came up with an idea a while ago but don't have all the kitchen implements (or cooking skills) to try it out myself. Grind up some deep fried pork rinds (you'd have to pour the result through a sieve to make sure there aren't any hard chunks in it) and add it to the breading for fried chicken. I'd get a real big kick out of it if you gave it a shot to see if I'm right about that adding a lot of flavour to chicken. I'm asking you because you're my favourite KZbin chef, of course.

Sam its been about 28yrs since i worked at KFC but you bought original recipe then made a similar version of the extra tasty crispy. The original is cooked in a pressure cooker with single breading of the secret recipe. The extra tasty crispy is first marinated for 24hrs then double breaded and cooked in an open frier. Great show as always except that time you did the backwards show lol.

Growing up in the 50's, my mom fried everything. Neck, back( 2 pcs) gizzards, liver. All of it. Rolled in flour with salt and pepper. Nothing like it. I think the chicken itself now doesn't taste as good. The chickens back then social distanced lol

DJJunBuggIQI...I know you didn't ask me but I saw your question that you posted a month ago with no reply given. So maybe my info could be of help. At least I hope so. :) Because it was a 4 1/2 pound chicken, my guess is Sam used approximately 4 cups of flour and set his oil temperature between 350 to 365 degrees Farenheit. Any hotter and the outside of the chicken will cook while leaving the meat closest to the bone still raw, especially with the thick pieces. In the 1950"s and '60's my mom would first parboil her cut-up chicken (cook it about half-way) in a pot of boiling seasoned water. Then she'd take the pieces out, pat each one dry, and continue with the regular frying routine that Sam showed here. And she always added cornstarch to her seasoned flour. She made the BEST fried chicken! YUM!! Lol.

I almost never do double dip batter on my fried chicken. That's the way I learned to do it from KZbin and Pinterest, but one day I got lazy and just did flour... it tasted just like my grandmother used to make. The double dip just makes the fry too thick. Muck lighter and crispier with just a bit of flower and no dredge.

I always love your recipes. I always fine clean and wash Chicken and brine in saltwater and lime or lemon juice for 1 hour in fridge to draw any blood, rinse dry and then process.

Back in the early 1990s, my father decided he was going to make KFC's original recipe chicken at home. He actually hit it on the head. I don't remember and I don't know if he wrote it down but it really did taste exactly like real KFC original recipe chicken. My mom would just buy KFC to keep him from destroying kitchen. HE sure could cook though.

The chicken does look great. But, I would also try a 3rd liquid dip and repeat the dry with a Pankow / and flavoured bread added to the flour on last crumb dip. Italian seasoned bread crumbs. The bread crumb also has a little Parmesan cheese so some may just like the Pankow/ Fish/ chicken mix, Depending if you like that hint of flavours.

He loves everyone who has every lived on this earth, with a perfect equal love regardless of their race, gender, ethnicity, faith and values and beliefs. The Lord loves you more than you can think or comprehend. "He inviteth them all to come unto him and partake of his goodness; and he denieth none that come unto him, black and white, bond and free, male and female; and he remembereth the heathen; and all are alike unto God, both Jew and Gentile" 2 Nephi. He is our loving, caring Heavenly Father. We are literally His children and creations. When we were in the womb, he knew about us" Jerimiah 4:5. He knitted us and we were created in His image. I testify to you that you and I are not a mistake. He knows the very moment when we stand and when we sit. He is familiar with all our ways and knows us personally who we are. The hairs on our very head are numbered. God loved us so much, He sent His Only Begotten Son for us, that we may be able to return and dwell in the presence of God again. The Lord has not forgotten about us even when it feels like He has. He will never forsake us. When we are happy, He and His angels rejoice alongside us. When we are sad, He heals us and lifts us up from our trials. He has always been there for us. He has always been our loving, compassionate Heavenly Father and God. Will we always be His children and people? I testify to you that God lives and that Jesus is the Christ. Both love you exceedingly and rejoice when you are happy. They both love you so much. They love you with a love unfeigned. They will never ever stop doing good unto you. I know that The Book of Mormon is true. "And when ye shall receive these things, I would exhort you that ye would ask God, the Eternal Father, in the name of Christ, if these things are not true; and if ye shall ask with a sincere heart, with real intent, having faith in Christ, he will manifest the truth of it unto you, by the power of the Holy Ghost". Moroni 10:4 I promise and testify to you, that if you will read The Book of Mormon, ponder on its message and ask God if it is not true, you will come to know of its truthfulness, whether its true or not true. Remember my friends that God loves you with all his heart, might mind, soul and strength. He wants you to be happy. He knows what you are going through and dealing with right now. He desires for you to return back to Him. Unfortunately, He has been misrepresented and seen as a cruel and angry God who anticipates for us to slip and writes down every mistake we make waiting to punish us by those who do not know or know Him fully. My friends, God has stored many opportunities and blessings for you. He is incredibly eager and desires with all His heart to bless you abundantly. He wants you to live with Him again. He only wants the best for you and your well being. He wants to experience everlasting joy and indescribable happiness in this life and in the life to come. He wants you to partake of His goodness and come and follow Him. The Lord does not care how early or late you decide to come unto Him. I testify to you that if you have strayed and wondered off the path that there is hope in Jesus Christ, The Savior of the world. The Lord accepts those who come unto Him whether your early, late or just in time who desire to change. The Lord will accept you wholeheartedly and forgive you if you are willing to change. The Lord will welcome you and will always be ready to embrace you with open arms. The Lord will lift us up in our trials and use us to bless the lives of those around us if we are willing to change. If you must know whether or not something is true or evil and deceptive, you can always pray to God. He will help you know what the truth is and what is not the truth. He will never be too busy to talk to. He will give you strength you need to overcome and conquer your temptations and will give you the strength you need to endure through your trials and afflictions. Paul said that The Lord will not give you temptations that you cannot resist, but that in your temptations, He will provide a way for you to resist, overcome and conquer them. He will provide a way. He wants to bless you and reward you abundantly. The Lord knows you and will not forget you. You are loved. You are utterly amazing. You have incredible potential. You are not forgotten or ever will be forsaken. You are special. You are unique. You are one of a kind. You have been reserved for this time and The Lord needs you on His side. Black Pepper and Salt are by far the most dominant spices in the Colonel's recipe. If anyone knows what matters next please share. I can't find a combination that matters much compared to plain old salt and pepper. But I'm open to suggestions. Seems like Sam dropped about ten bucks worth of spices on that flour dredge. I just don't have that kind of capitol to invest in a chicken dinner...(smiley face).

Interesting! I like to think I make a decent fried chicken but my process is way more time consuming than yours. I brine for 24h but my brine is part marinade as it's loaded up, my flour mix has 20% cornflour 10% breadcrumbs, I use a fewer spices, my intermediate dip is just beaten eggs (my brine includes yoghurt and aromatics so tangyness and flavors go deep inside) and then I fry slowly at medium to render the fats from the skin under the coating and make it more crispy and finally I finish off in the oven to make sure I hit the internal temps. Compared to all that your recipe looks like a total winner. Will try it this weekend!

To get a perfect cut on the leg/thigh have it skin side down, cut through the fat line and you have a perfect cut every time. I would use season salt. Would it be better if you marinated it in buttermilk for awhile? I've never tried it, but I've heard that buttermilk ranch dressing is good.

10 of us growing up. Frying the backs, gizzards, & livers were just as great! I like the backs cuz my mom loved them...crispiness of the "boneyness" biscuit & syrup.....luv ya! Lemon chicken was so luscious and delish Thank you!
