Typically I am not a “commenter;” however, I looked over at my 6 year old daughter while watching this episode (who is running around gathering items like a crazy person) who told me she was getting her Sam ingredients ready so she could “cook along with Sam.” I just had to snap a picture. Over the past two years she has cooked a few Sam recipes on her own.

Beware: many carbon steel pans, when the induction top rapidly heats, tend to warp. For short cooking times these pans will typically return to normal. If you're going to use carbon steel on induction, start with the lowest power level, let the pan heat, and then slowly turn up the heat. Matfer and de Buyer both exhibit these issues, but Made In and Misen have also displayed this warping.

That looks amazing and simple!! You know what else is simple? Growing scallions!! Please please please do it. The ones you get from the store, just leave about an inch above the roots (use the rest of course!), prop them up in a small cup with water - a shot glass works perfectly. In a few days, plant in some potting soil. That's it! Whenever you want scallions, snip them off about an inch above the soil and they will regrow. Always available green onions. :)
