I made this yesterday and added the extra tomato paste and perhaps a little more oregano. It was delicious. When I served, I drizzled a little heavy cream over the top with the freshly grated parm. I also drained the grease out from the ground beef prior to adding the other ingredients. I used white wine in mine. As it rendered down after about an hour, I cranked the heat and kept stirring to add some deeper flavor/color prior to adding the milk. Seriously, this was one of the best Sam recipes I've made yet. I love a good/simple pasta dish and this is a keeper. It takes a bit longer to cook/prepare, but it's worth it IMO.

The whole is greater than the sum of its parts. It's a quote from aristotle. Hes saying that if you dont consider a phenomena as a whole you cant conceive all of its qualities by just observing its parts. Consider a bouquet of flowers. If I took a part every petal and stem before laying it on a table, you would not be able to truly understand what a bouquet is because some the bouquet's properties can only be instantiated when presented as a connected whole.

I made this last night for about 25 people. I used 5 lbs of meat and had to guess a little bit on the rest of the ratios. With that amount of volume it took a lot longer to reduce down to the the consistency I wanted, but the end result was amazing. The flavor was rich and developed enough that a gourmet chef would appreciate it but familiar enough that even my little kids who are picky eaters scarfed it down. I love to cook but often lose the desire because I get stuck in a rut of constantly making the same things. Your channel is the first place I go when I'm looking for some culinary inspiration!

Made this tonight. Had several vegetarians at our gathering, so I made this with two massive changes: plant based protien instead of beef; vegetable stock instead of beef stock. It was a serviceable dish, and everyone ate it and liked it, but who wants to prepare something "serviceable"? We gathered beef eaters knew we had sacrificed much and will do it again with a guest list exclusively of meat eaters. Terrific recipe, by the way. Easy to follow, easy to double with no ill effects, and came together exactly as presented in the video. Thanks, Sam, I can't wait to do it properly. Sam’s recipe is solid. As a teenager growing up in Italy, our neighbors had a slight variety of this recipe. First, they would use two carrots to add the sweetness to the sauce. Second, they would insist on fresh herbs over dried spices. Finally, they would devote a bottle of vino to the cooking action. I always helped in this endeavor because it meant speedier food, but always remembered the many inputs of my neighbors into this basic recipe.

I have two questions: can you just use a good chef's knife to prep the veggies as fine as you can get them if you don't have a food processor? Or some other method? And, don't a lot of restaurants use a red wine like a Cabernet for this recipe, or could you use either and get good results?
@stevewoolhiser72492 жыл бұрын
Yes and Yes. As a butcher, my career literally revolves around knives, and yes, a good, high quality chef's knife in combination with a decent steel and sharpener can do any job that almost any fancy expensive kitchen gadget can do. Spend the money on the knife. I recommend the 8-12" Kessaku Chef's knife, and their "Utility Knife" as it's sidekick. As far as a steel and sharpener, you don't need to spend a lot on those, but you should have one of each and know how to use them.

Mirepoix is French and almost universally means onion, celery, and carrot in a 2:1:1 ratio. The Holy Trinity or Cajun trinity, as you put it, is creole and universally means onion, celery, and bell pepper in equal proportions. If garlic is added it’s referee to as the Pope. And contrary to popular belief Emeril did not come up with it. The name has existed for decades. Emril simply picked it up as a creole chef and NOLA restaurateur.

@oFriskyPanda Its just common sense man. It is obvious that giving your digestion system a break, to let it clear itself out for a few days to a week every year or couple years is a good idea.

The whole is greater than the sum of its parts. Meaning that the end result or product is better than the individual ingredients or parts.

I was already cooking a bolognese when I watched your video... I added the hit of balsamic vinegar... POW! Totally elevated the sauce. Thanks, Sam!

My husband loves to cook and does most of the cooking for our family. I made dinner and used this recipe and it was delicious! I've made it a few times now, it's amazing!

Just tried this out. I have a bolognese recipe that’s the bomb. But now it’s in second place. If you like bolognese make this, it’s pure gold. I have 12 cups of it in the freezer after making a batch.

Best ever Bolognese: 1) render diced guanciale or pancetta. 2) sweat mirepoix and garlic in pork fat. 3) add and cook pink out, but dont brown 50% beef 25% pork 25% veal or just 100% beef. (U don’t want browning because the end texture is effected by the browned protein, you want soft beef in the end, stewed basically.) also skim fat and scum at this stage as meat releases liquid. 3) once meat is not pink, make an opening in the bottom center of pot (or remove meat mixture entirely and add back after deglazing) and add tomato paste and let caramelize to bottom of pan as much as possible 4) deglaze with ur fav red wine. Cab sav is pbly best. Let reduce au sec (almost dry) 5) add milk (return beef and pancetta back into pot at this stage if uv removed beef) and reduce au sec (almost dry) 6) add crushed tomatoes. Fresh thyme, bay leaves, salt, pepper and a pinch of chili flakes. 7) cover loosely and simmer on low for 2-3 hours until meat is very tender. Check and stir intermittently throughout process to ensure nothing burns to bottom. 8) remove bay leaves. Done. Really is best to make ahead of time. The next day is AMAZING.

GREAT GREAT GREAT recipe. I grew up eating once a week at an Italian restaurant full of little old Italian ladies in an old farmhouse. While the men were working in the coal mines, the women were making the best Italian food the midwest had ever had. I've been trying to duplicate their Bolognese for 2 decades. This is as close as I've come and I thank you for that.

“The whole is greater than the sum of the parts.” Interpretation for Max. The team is better than any of the individuals.
@otallono4 жыл бұрын
It's the individuals that make the whole, if each individual sucks, so will the team unless they unfairly outnumber the opposing team or something but even then...

I think the saying you were looking for is "the whole is greater than the sum of its parts." It means that the combination of these things is better or more valuable than the things are separately.

You boys are doing pretty good with the videos. May I recommend looking into using a multi-band compressor on your audio (can be done in Premiere)? You've got a few volume issues. For example, in this video, there are three different general volumes. 1. The cooking parts (sounds about right) 2. The music (much louder than the cooking parts) 3. The paid promotion section (quieter than the cooking parts) A multi-band compressor should help. Keep up the good work!

Late to the party for this video. Made this for the first-time last night and it's absolutely outstanding. I used fresh crushed tomatoes rather than a canned, so I layered in some salt as I was cooking. This will be a recipe I make for years to come. Thank you Sam.
