Assuming it comes pre-seasoned, use a little warm water, kosher salt, and paper towel to remove caked on debris. Once removed, you can lightly wash it with a little more warm water and plain dawn dish soap. Dry immediately, heat it in the oven to about 200 degrees F. Wipe oil of your choice onto griddle, then place back into oven and let cool. Done.

The black pepper aioli sounds great! I was just turned on to chili crunch mayo and I love it. So freaking good. On a sandwich with ham, chicken, pickles, pepper jack cheese, and fried onion. On some good Italian or Cuban type bread. A must try.
