You could have used one more flip on that steak after dumping the rest of the marinade on it. A few seconds would have pasteurized the second coating of marinade that was previously in contact with raw beef.

Try hanger steak or outside skirt with that marinade, that what we use in Monterrey, Mexico. Also add some Worcestershire sauce to the marinade, that also what we put in the marinade for a carne asada (soy sauce also is in the traditional marinade of Monterrey). Monterrey, Mexico is the palace for carne asada in Mexico.

Recipe Below: Instead of griping that Sam doesn't do recipes I'm going to key it in hear and help make america cook again! Carne Asada Torta from STCG Heat the grill Flat iron steak, filleted flat Marinade: Blend the following • Bunch of Head of cilantro (tops) • 3 cloves garlic • Tbsp ea Cumin, Brown sugar • Tsp ea S&P • Juice of a lime • Neutral oil like avocado • 2 Tbsp soy sauce (non traditional but good.) Pour 1/2 over meat in a zip lock. Rest in the fridge Avacado Crema • One avocado • 1/4 non fat yogurt (or sour cream) • 1/4 C cilantro • 2-3 Tbsp milk • Clove of garlic • Juice of a lime • Pinch of S&P Start grilling a couple thick onion slices coated in oil until well charred Grill the meat medium rare. Baste some marinade on. Rest it. Cut a Torta or roll, slater with mayo and grill until crisp and browned Rough chop the onion and Carne. Assemble: Bread down, add a generous layer of avocado crema. Add onion, Carne. Add three slices of jack cheese. Slather top with reserved marinade and top the sandwich Put the whole sandwich on the grill to crisp with some weight on top. Turn and crisp the top.
