when we go camping we make a "Skillet"breakfast. Much like this recipe. Yes Spinach is a must. When almost done we had 2 kinds of cheese.... Mexican and Italian. Turned out great.

Time-saving tip on the Potatoes! I've prepared this delicious meal on the weekends. HOWEVER, whenever I know this dish will be a weekend brunch meal, here's my time-saving tip: Let's say, it's Saturday; and I've decided to prepare delicious oven-roasted herb potatoes to serve with that evening's meal. Because I know I'll be serving up a delicious Sunday brunch the next day (similar Sam's recipe), I'll prepare an extra-large batch of the oven-roasted herb potatoes. Why? Well, the next day, while preparing brunch, and the bacon is sizzling away in the pan, I'll dice up the left-over ALREADY COOKED oven-roasted herbed potatoes, toss them in with the delicate veggies to saute AT THE SAME TIME! Achievement: No weird, half-raw potatoes! Instead, Perfectly sauted potatoes with the perfect outer crispy crust! Try it - It works!

I absolutely LOVE dishes like this. I used to cook stuff like this all the time. I think I'm gonna have to make a scaled down version of this LOL! I'm tryin to lose a few pounds haha! 100% approve of spinach. Eggs and spinach are magic together. It's great in scrambles or with fried or poached eggs. Just yum!

Reduce the calories by wrapping the potatoes in very damp paper towels and microwaving for 5-10 minutes -- this way they soak up less bacon grease. The only turkey bacon I will tolerate is Oscar Mayer... but it's just not real bacon; instead, go with 93% ground turkey and season the hell out of it. I also go for 50% vegetables which also reduces the calories. Finally, more eggs, depending on your dietary version, are high protein and usually "legal". I love hash and make it all the time. Sam's version has far too much potato.

I like the fact that your recipes are easy. Since being out of the hospital and not being able to stand for a long time due to the incision in my leg, it is nice to have something fairly quick, easy and simple to make. I would make this for breakfast, lunch and dinner Thank you Sam for making my post hospital recovery so much easier

We do something similar at our house. But we call it "stuff", and stir in scrambled eggs. Will have to try it your way with the eggs this Saturday. That's when we clear out the fridge with whatever. Chicken, pork, steak, veggies, rice sometimes. It's all good.

This is my go-to brunch-at-home dish!! It's great for cleaning up whatever leftover veg I have lying around-- I've made it with zucchini, onions, peppers, ham, various types of cabbage, etc. So good!! And so easy, one pan, feels fancy but takes extremely minimal effort, literally the best dish ever.

I just spent a week in Quebec. They are in the middle of their sugaring season. We had so many things made from Maple sap that was fantastic. Eggs poached in syrup. Some of the sap taken before it is ready to be syrup and mixed with brandy as a hot toddy. Syrup taken to 265F then poured into crushed ice. Also, pouring that into small ice cream cones. You could easily do a maple themed show at some point. It’s not just for breakfast any more.

My stepfather makes hash every weekend for breakfast, and it's just as you said...all the leftover veggies, meats, whatever. Smells so good. He fries the onion alone first almost to the point of burning, then adds everything else.

Interestingly enough, I made something remarkably like this last month. I showed some people, and was quickly, and kindly informed that it's available in Denmark, in the frozen section. I plan on getting more potatoes very, very soon. Peppers too, but I'll have to go the pedestrian route, because my wife doesn't like spicy food. She wouldn't even take that 1/15 chance.

It's available frozen in Sweden as well, many different variations of "pytt i panna" (Translates roughly to "tiny things in a skillet"). It's extremely popular with students and people short on time, whip it up with a couple of sunny-side up eggs and some pickled slices of redbeet and you've got a decent meal. Though it's nowhere near as delicious as a proper home cooked "pytt", such as what Sam is cooking!

I'm making this. You guys should consider getting a couple chickens in a smAll coop. You throw away so much stuff and the chicken would eat it all and convert to protein. As much as you like eggs Sam you'd love having fresh every day. I got a couple laying hens I could drop off. I'm getting about six dozen a week out of 17 hens. I keep my whole street in eggs. 😂

I make breakfast hashes like this all the time and when it's done I spoon some in with an egg into a giant flour tortilla. If I'm feeling bold I'll cheese skirt the outside of the burrito. So gooood.

This looks absolutely fabulous! Even the Spinach. Because of your Shepherd's Pie I put spinach in all kinds of stuff now ! Who knew spinach was so damn good. I'm not a health freak by any stretch of the imagination but blanching the potatoes before they get cooked in Grease makes a world of difference. Makes the overall dish taste so much more fresh. Imho 👍

We call them Cleanouts. We round up leftovers and anything in the veggie drawer that's about to die, and make a scramble for dinner. They're always filling and delicious plus they cut down on waste.

Received my 12 inch skillet today. Going through the seasoning process now. It is the most course finish of all my cast iron pans. We shall see. I love the size and the lid. Been overdue for a pan this size.

The heat in chilies doesn’t actually come from the seeds. The capsaicin is concentrated in the white membrane inside the pepper.

This is pretty similar to a breakfast i make but use merguez sausages alongside the bacon, and tex-Mex shredded cheese. Its a great casserole that when I make it, there are no other meals for the rest of the day. because you'll be full til the next day

The heat doesn’t come from the seeds. It comes from capsaicin which is primarily found in the membrane that holds the seeds.
