I don’t want it toasted. It dries out the tortilla. Then you have tortilla crust everywhere. Driving down I-5 with tortilla crust all down your shirt is unacceptable. I can see dropping the burrito on a hot grill for a few seconds to give it a few grill marks would be nice.

Try adding a splash of milk to your eggs when you beat them. They're still soft and fluffy but you can let them set up a bit.

I don't mind runny fried eggs, but gooey scrambled eggs I don't care what pretentious bastard says it, are NOT GOOD! You can still slow cook eggs to firm but creamed scrambled eggs have NO texture other than wall paper paste. They looked pretty much perfect, if you are used to hard eggs that you can pick up at the poke of your fork than you really cooked them too long. In my opinion Gordon Ramsay makes the perfect scrambled egg and they are a little more done and fluffy than this which looks probably more appealing to you.

I've made this several times this past week, both with runny eggs (which I normally don't like), and with more of a fried egg. The runnier eggs are so much better. As one other poster mentioned, it's probably due to the cheese. He let's them sit in the pan and they do firm up a bit. Honestly, there's so much awesome going on in the burrito you don't notice. The salsa is to die for. I had no idea it would turn out so good, and very easy to make. This is a definite keeper in our house. The only thing I do differently is that I put the burrito back on the warm pan to toast the outside and seal it in.

I cook mainly for 1. So I par-boil my red potatoes or (yukon)...keep them in the fridge, throw the sausage/bacon in the toaster oven ...set the timer...chop the onions/green onions/ green pepper/mushroom/garlic/jalopena and sautee in butter/olive oil...then when the toaster timer "dings" I throw in the meat...toss in some tomato, (cause i don't like it cooked much)... pull the tortillas out of the oven that have been covered in cheese...and that's breakfast...in about 20 min...and most of it I am having my coffee.. I like this guy's style. Life is good!

Same thing happens in a regular blender. It's why I was taught to put a towel over the blender when you put hot food in it and hold down tight on the lid. That first pulse can dang near blow the top off.

I watched this video a few weeks ago thinking you just put raw eggs on your burrito. But then I tried making the eggs this way and oh my gosh they are amazing

fyi, chop the potatoes, boil them until they start to get slightly tender, drain them and then fry them. It speeds the process up a lot and gets better browning.
